1 lb. cream cheese, soften
1/2 c. crushed pineapple, well drained
1 loaf sandwich bread
soften cream cheese, add crushed pineapple, mix well. Chill.
Remove crust from bread. Make sandwiches, cut diagonally.
This recipe is so good with date nut bread.

For finger sandwiches here is a trick that my wife and I learned when making them for a senior citizens "prom" at a assisted living facility. Smear unsalted butter on the bread before putting anything like chicken salad, egg salad, pimento cheese, etc...The butter keeps the filling from soaking into the bread and doesn't add anything to the taste. This was learned from the bakery where the bread was bought. They said caterers do this. We did it and it worked. I even smapled some to see about the flavor of the butter and I couldn't tell.

They said it and it's true . I grew up in an BWI-American household and finger sandwiches were to be seen at most every gathering. It generally was the responsibility of smaller children to do the butter spreading. Oh yes and certainly sweet/unsalted butter should be used. You may even use the butter with cold cuts(ham, roast beef, turkey, etc) with little to no taste discern able. Good commercially available breads to use are:
Pepperidge Farms or Arnold's Brick Oven. Either bread has a firm enough texture, good taste and no much crust.
You can also make flavoured butters such as honey butter which goes nicely with turkey or ham; herb flavoured butters or even pesto flavoured butters.
Have fun with this concept should you opt to embrace it. It's easy peasy and always a crowd pleaser.

I couple of my friends and I threw a baby shower last summer for 40 people. We filled a large bowl with barely sliced Costco rolls and next to it had trays of sliced turkey, ham, assorted cheese and a couple of bowls of mayo & mustard. Side dishes were Chinese chicken salad, potato salad, fruit salad and broccoli salad. Drinks were non-alcohol punch and champagne with strawberries. For desert we served two gourmet bunt cakes. One was white chocolate and raspberries and the other was some sort of marble chocolate cake.

This one is EASY!!
Mix 8oz. of cream cheese with a packet of Hidden Valley ranch. Spread onto slices on French baguette bread. Top with a slice of cucumber. Sprinkle a little dill onto each. Voila! Fancy cucumber sandwiches!

I thank you all for the good suggestions. I was leaning to something like this. I like the idea of a high tea. I am meeting the bride and her mom tomorrow to help sew brides maid dresses and we'll make a final decision on what she wants. After all, its all about her! I may just pull this site up and let her see all these wonderful ideas.

Sounds delish. Has me thinking along those lines for our 4th of July Picnic.
