On our last trip I noticed one of the trailer hubs were quite a bit hotter than the other one. I had inspected and repacked the bearings before the trip and adjusted brakes. During that process two of the "hub caps" I'll call them, broke and I haven't replaced them yet, so I was able the feel them temp directly on the metal bearing cap. Driver front very hot, passenger rear cool as can be.
So I jacked it up the other day, brakes aren't too tight, could be tighter actually.
I backed off the bearing nut back one spot for the pin and it just barely gave it a slight wobble.
Could I have had it a little too tight? If so we're only talking a 16th of a turn or so?
Leaving for the beach friday, I'd like to make sure it's all right.
Trailer load as even as can be and new tires.

I doubt you had it too tight and if there's a wobble now, it's too loose and puts all the load on just a few pins rather than distributing it all around. I would tighten it back up. Biggest mistake most DIYr's make is making them too loose.
The difference in temp could easily be brake adjustment or even one drum being more out of round than the others. One hub being slightly warmer than the others is not necessarily a problem.

No, not slightly cooler. One was fine. The other was HOT.

If you can tow the camper for some distance and coast to a stop will give you a better gauge if the bearings are over heating or is it just from breaking.

OK, then it's probably time to take that one completely apart and give her a good look over. Sorry, I hate that job!

Always check hub temps by hitting the highway for a few miles then COAST to a stop without using ANY brakes. If you stop using the brakes you won't be able to tell the difference between brake heat and bearing heat.

Im going to try to take it for a spin tonight and see what it does. When off the ground the wheel spins very freely. What is a normal temp when feeling directly on the bearing cap just going off touch?

Also get your self an IR temp gun. harbor freight, Lowes, etc have them.

My hubs run about 95-97 degrees on the shady side. 10-15 hotter on the sunny side.

Most likely a bearing from what you have told us. I would repack and inspect the bearings and races very carefully on that hub. If It were mine I would replace the bearings and races on that hub to be on the safe side. A bearing failure can lead to a bearing fire which could be bad.

I'm having the same problem. One hub was running hotter that the other three. Three were at about 125F and one was around 250F. Found that out using the non contact thermometer, works great. I had the dealer pack wheel bearings and adjust brakes. Still have the exact same problem. I jacked up the side of the camper with the hot hub and had my wife apply the break while I was spinning the wheel. It stopped fine, but the took quite a bit of force to get it going again. I'm thinking that maybe a I have break that is hanging and not releasing right away. There are saying hubs can run at diff. temps, but its weird to think that three area at the exact same temp and one is 125 degrees more, that can't be right.
