I drive a Honda Odyssey. We are talking about the possibility of buying a used "tow" vehicle so that we can increase our TT/hybrid options.
Right now, I can haul 3,500. I would be interested in increasing that to 5,000-6,000 with the new vehicle.
The only problem is that I have two small children that require car seats, and I want to make sure that the vehicle has a safe backseat area with all the proper tethers, etc.
Does anyone have any recommendations?

Ford Crew, and Supercab trucks from 2004 up have tether's, and lots of room for car seats. I would be surprised if the others don't as well.
You can also look at Expedition, Tahoe, and Surburban.
I had a popup and a 5,000# tow vehicle.
Then we moved up to a 4500# hybrid and taxed the tv.
Now we have a F-150 and 9700# tow capacity.
DW's already looking at new trailers.
It's a vicious cycle I tell 'ya.
To the OP - I think you'll find an extended cab or full crew pickup to be cheaper to purchase used rather than an Expedetion / Suburban SUV.

I'm a little concerned about the space. The nice thing about the minivan is that I can throw random stuff in the back and still have room to maneuver around the kids. We still have to store strollers, etc., although we are quickly outgrowing that stage (finally). But the minivan won't tow the TTs that we are considering.
I am going to research the crew cabs and the larger SUVs. I like that the SUVs have covered storage in the back. I guess I'll have to see what kind of deals we can get.

A crew cab you can put a canopy on the rear and have storage also. Depending upon "what" you take with you, that storage area can be a good type, ie bikes, firewood, fuel/generator etc. Things you do not want in the back of an SUV/Van style rig.
Also, remember "PAYLOAD" you can have tow rating, but if you do not have enough payload for the family, bikes, strollers etc you take with you in the tow rig, you may max out the rigs you are initially thinking of before hooking up the trailer and its hitch wt that the TV needs to carry. I needed a 1ton SW CC pickup to handle my family of 6, bikes etc. It was not hard to put over a 2000-even 3000 lbs of stuff in the truck including when my 4 kids were adult sized teens. Your current two kids may want to bring friends..... add in another 200-400 lbs of people wt......
Frankly, if you go new, a 2500 burb from an suv standpoint is probably the only option. Used you could include the Excursion. if RWD will work, any of the 2500/3500 vans. OR 25/35 series pickup in a crewcab short box would work for you too. Those would be my ONLY options for tow rigs in your shoes frankly. By the way, my trailer was 25' and 6500-7000 lbs of total wt!

Agree with Expedition or full size Blazer. Truck with canopy would also store your stuff. I would not tow anything with your Odyssey. The transmission is not known for it's strength.
