I'll give another recommendation to go to the Rockbox Theater. We thought the show was outstanding and a lot of fun. Great place to go after dinner.
We hiked up Enchanted Rock and sat on top enjoying the breeze...no make that wind...no make that gale force strength...well, you get the picture. Well worth the 20 minutes or so it took to get to the top. Excellent view of the surrounding countryside.
Spend a 1/2 day visiting the many wineries in the area. It's a good way to stock up and learn a lot about grapes. Have a designated driver, you may need it.
I'll be the third to recommend Rock Box Theater in downtown Fredericksburg. Lots of wineries in and around town and try to have dinner at The Nest on highway 87.
There's a private exotic animal park/zoo four miles north of Johnson City on 281...they ride you through the place on a wagon/tram pulled by a tractor...had critters like zebra, ostrich, various gazelles and cattle (including bison)...nothing ferocious....you can feed 'em right while sitting in the tram...
kinda cheesy, but our five-year-old had fun...
From Fredericksburg to this place would be about a 45 mile ride

Love the hill country. All good suggestions and should be visited.
Gruene, right outside of New Braunfels, has a great old dance hall where Michael, the John Travolta movie was filmed. Great historic spot in the class of Luckenbach, which is a "do not miss" spot in our book!
Lots of wine tasting around Fredricksberg - go out to the winerys for tasting. Along with the Nimitz Museum is the War in the Pacific Museum that has the most extensive exhibit of that part of WWII that I have seen anywhere. Takes several hours just for that.
There's also a little resturant outside of Johnson City that has good chicken fried steak if like that.

we went to the Nimitz when we were there. We highly recommend it. It is a really good museum. You can spend all day in there. A great outing for a rainy day.
You are in the heart of the Texas wine country there. Lots of great wineries to visit. Some of our favorites are Texas Hills and Singing Waters, but there are many more. We go there all the time and stay at the Fredricksburg KOA, usually for a 4-day stint at a time. Great campground. Some good antiquing and shopping if you are into those activities. We are thinking about retiring there
