Would you ever put it in one of those gears while towing?

I have been keeping it in "Drive" with the "tow/haul" "on".

2004 f250, towing 10,000lbs bumper pull.

Why not that's what they are for. Sometimes it is easier to lock it in certain gear rather than have it shifting around. Specially going down hill.

I've dropped down into 2nd on some steep long mtn. downgrades in tow/haul and with exhaust brake active.

Just had an occasion last Monday to drop down into 2nd in tow/haul when we got caught up in road construction and they were running escort cars...MT Hwy 12(W) going west of Helena. All traffic stopped at bottom of incline then escorted for about 3 miles at slow speed up to top of mtn. grade. 2nd gear all the way.

Otherwise it's in 'drive' with tow/haul on.

Control speed while going downhill. Not having to use brakes.....Well, maybe,slight use of brakes.

I only use the tow/haul for braking and going down steep hills.

If I set cruise, my truck automatically shifts down (even multiple gears) if the speed goes significantly over what it's set to while going downhill. Is that not usual (it's my first vehicle with an automatic transmission)?

Absolutely, if you are going up extended grades, you can shift down to keep your tranny from "hunting". I have powered up a couple really steep grades at 10 mph in first gear.

As mentioned, controlling downhill speed as well; shifting down to 2nd at the top of a hill will help keep speed down and you don't have to brake nearly as much.

When you take off in "D" the trans automatically shifts from 1st to 2nd to 3rd, etc.The only time you manually need to put the shift lever in 1, 2 or 3 is going down a grade to use the engine braking to help slow.
