Looking for the best route into Coarsgold, CA pulling a 39' fiver. I will be coming down I-5 from Redding, CA.

I have done this route in the reverse direction a few times.
I-5 to Stockton. At Stockton, left on 4 to 99.
99 south to Madera. Then, 145 to 41.
North on 41 to Coarsegold.

What about catching 99 at Sacramento then to Medera? Is 99 four lanes?

Stay out of SAC the traffic will kill you. Instead of Hwy 4 at Stockton I'd take Hwy 120 south end of Stockton to 99 and Madera as stated
