What's your homemade formula for meat & fish seasoning ? With no particular recipe to follow, I mix up something as I need it but would be helpful to have it in a little bigger quantity so it's ready to go. I know, I can google it, but I'm looking for your method, if you'll share. Thanks

I make up my own taco seasoning with chili powder, paprika, cumin, onion and garlic powder and a shake of caynenne pepper. Sometimes I use Nutritional Yeast for that cheese flavor. I had a recipe but now I just dump.

I use 2 different seasoning mixes. Hy's steak seasoning - Costco. Emiril's essence which you have to buy the components and then mix. I put that **** on everything!!!!!!!!!!!!!!!!!!!!

Essence receipe:

Ingredients
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Directions


Combine all ingredients thoroughly.

We use the "over the counter" store bought Mrs. Dash sodium free seasonings. 15 types and flavors, all natural and quite good. The Southwest Chiptole is muy bueno!

I can also mix together and 2 or 3 and come up with a entirely different blend.

That and Bob's Seasoning salt for burgars!

Salt and pepper.
Garlic powder for savoriness.
Brown sugar for sweet.
Hot cayenne for heat.

Any combination of the above depending on our mood.

I've probably got over $100.00 invested in trying all the seasonings on the grocery shelves on my quest to find one good one to be my MH RV'ing BBQ seasoning. Still have all of them in drawer in the MH!

What I found to be THE best with a little bit of effort is:

Chef Paul Prudhomme's
Magic Seasoning Blend
Blackened Steak Magic~flavor
It's the one with the purple cap.

Dump the entire bottle of seasoning into a very fine sifter and sift out all the dang huge fennel seeds that leave a bitter taste in your mouth when eating the food and burn on the food when cooking.

Once the seeds are removed this seasoning is just outstanding
tasting on chicken. Everyone raves when I use it and want to know what is in my secret seasoning.....shhhh don't tell anyone!

My house seasoning blend is as follows:

Magic Dust

Black pepper
White pepper
Salt
Garlic powder
Onion powder
Celery seed
Cayenne pepper

I mix up a batch and put it in a shaker. We use it on everything from steaks to veggies, fish and more.

If you saw the movie Sideways, you saw them dining out one night at a restaurant called the Hitching Post. It is actually a real restaurant up in Buellton, CA and their house seasoning blend is called Magic Dust which they put on their world class steaks. This is their recipe.

Scampi anything seasoning

Learned this universal seasoning/rub in a cooking class last Thursday for anything white (fish/pork/chicken). We did salmon:

Rub: Brown sugar
Paprika
Clove
Powdered garlic
Salt
Chili powder
Cumin

Sear both sides. Deglaze with white wine. Add garlic and cilantro. Serve on angel hair pasta.

I have my own rub recipe, but in reality most are similar and mine is a personal adjustment just like most.
As far as spice mixes go, I'm hooked on Weber Beer Can Chicken and their Gourmet Burger, both outstanding in my book.
