It seems like the only thing we really want in a trailer is at least a queen bed, a bathroom, possibly a small table with A/C.

Does anyone know if anyone makes something like this? I like the little fiberglass and aluminum trailers but they all seem to have a dinette, refrigerator, kitchen, etc.

Look at the Lance trailers.

Thanks everyone for your quick replies. The Fun Finders look good but the Lance trailers seem harder to find. We are trying to find something used on CL.
I am also looking for something with a GVW of 3000# or less that can be pulled with our Honda Odyssey although it is becoming more and more apparent that I will need to move up to a truck for a tow vehicle.

Take a look at the Mallard 24J. Large bath, queen size bed, lots of closet space.

Try www.trailmanor.com for their foldup models. Their model 2720 will fit into your garage!

I think my trailer- Mountain View Retro 140 from Skyline might meet your needs. Check the Skyline web site. They call it something different in different areas of the country. Look for Retro 140. I have a bathroom. Not sure if the bed is double or queen, but it is plenty big for two people with room to spare.

GVW is 2,350.
This is the link to my dealer's page that tells about it:
