I have some water damage to one bedroom wall of a '97 Holiday Rambler Navigator 40ft diesel pusher. The wall covering peeled back exposing damaged 'particle wood' or some kind of wall board.
What is this material? How is it mounted? What material should I use to replace it? Should it be fire retardant or special in any other way? Where can I purchase it?
Is there anything special about the wall covering or how it is removed and replaced? It looks similar to vinyl wall paper.

It most likely is just vinyl wallpaper. Usually they use Luan plywood for the wall facing.
That is just a thin (usually 1/8 inch) mahogany plywood that should be easy to track down.
Maybe in yours they used a particle board facing and that is why it swelled. The wall studs will be 2x2 spruce or similar. An inside partition wall should be easily repaired by a competent carpenter

boogaloo.....It might get pretty pricey or become quite an exstensive repair to remove the wood. If the wood is not distorted, I would use some varnish or other sealer and seal it. Once it's sealed, find some new vinyl wallpaper to cover the wall. You might find a solid color wallpaper that matches the other walls.

You can buy luan plywood in various thicknesses at Home Depot. IF the damage is right below a window, I have seen the wall repaired by screwing a new piece of plywood on to the wall and then covering the lower portion with a piece of carpet, sort of like a wainscot. They make different kinds of trim pieces to cover the top of the carpet edge.

Just finished helping a friend repair wall damage. Windows and roof had leaked on either side of MH. Removed the old wall material. Then bought some paneling from HD. Used construction adhesive to attach paneling. On this RV the walls were done with steel frame and insulated with foam panels. Need special adhesive to attach paneling to the foam.
