When is too soon to sanitize the fresh water system before leaving on a trip? One week, one month, or more?

I sanitize my fresh water system when I springerize my rig and sometimes it will be months before we go campin'. We do store somewhat chlorinated city water in the tank which helps.

I full time and I sanitize often. Different CG well water, the hoses we use,etc. I sanitize in the morning and run water thru the lines until there is no smell of bleach. I sanitize all the hoses I use also.Just put a nozzle on one end add water and a little of bleach and put another nozzle on the other end and let sit, and then rinse. Not cleaning out the hoses negates all the time you spent on the tank. 
So I guess my answer to insure your lines and tank are nice and fresh would be to do it the day before your departure. And I chuck those water hoses periodically and replace with new ones. they do deteriorate inside and several types of mold does grow inside them. And their best growing season is when left in the MH bay for long periods of time.

Chlorinated city water works for us. No additional treatment needed so far.

I've pretty much just run my own city water thru my system and have never officially 'sanitized' it... If I were using a lot of camp water of unknown source or whatever, I'd probably sanitize it.

the beginning of the season when we open the trailer. we generally don't use campground water, prefer to run off our tank that is full of water from home. if we do use campground water and notice an odd taste or smell, we will flush the system at some point before the next trip.

I have to ask how do you travel with obbo, Linda and the furry kids (1&1/2 German Shepherds) I have never seen half a dog . I have seen 3 legged dogs, and recently saw a video of a dog with only 2 legs.
We sanitize the system at the beginning of the season and only do it again if we are concerned about the quality of water we added while away from home.

Depends on how well you sanitize it, how much chlorine or chloramine is in the fill water, how many residual microbes, and how warm your fresh water tank and plumbing is going to get in the interval.
In the right weather, a truly clean system might stay safe for months. Filled with not really clean water and stored in hot weather, I would not trust the cleaniness of the fresh water system for a week, I would flush and fill again immediately before starting my trip or campout.
