I have a 2002 Roadtrek with a Suburban SD2 (2 burner gas stove.)
The stove works fine, but water gets easily splashed into the stove and has caused it to rust somewhat.
1. Did these units come with a stainless steel cover? I see SS covers for sale for this particular model of stove, but not sure if they can be installed with enough room in the Roadtrek unit.
2. Are there upgraded stoves for this ?
ON EDIT:

I made a tray to use as a cover for my stove top. Flip the tray over to cover the stove top. Mine fits very snug. Then you also have a useful tray to use to help carry things in and out of your van.
Davydd on this forum found a tray to purchase that fit his stove. I think it was for his previous B van.

You said you have a 2002 RT, but you don't state what model or if it is a Dodge or a Chevy. I have a 2002 Chevy 190P and my RT came with a molded fiberglas cover for the stove to match the counter top. I don't know anything about the Dodge models or the 200 model.
Our stove has rusted also. I assumed it was due to the humidity/rainy climate. I found a dandy tray at Crate and Barrel that fits perfectly over the burners when turn upside down. It also adds to the counter space.
