I don't believe it! I was just joking (above). Then I did a search on the internet and guess what? I found this:

Fat-free half & half is a dairy product made mostly from skim milk plus a thickener called carageenan. The taste and texture of fat-free half & half is very much like regular half & half (which is made from equal parts cream and whole milk), but with only about half the calories and no fat.

I though half and half was cream from a Jersey and a Holstein mixed 50/50.

Now that you mention carageenan, it makes sense. When I was a kid out of high school, I worked in a place that made food flavorings, etc. We used a lot of carageenan. It's a natural product that makes things like Chocolate Milk "thick" when you drink it. Used extensively in ice cream too.

Dutchmen, I get it now; it's essentially skim milk that has been made to be "thick" by adding carageenan.
