Here's another....

Take a ribeye steak (thick), slice a pocket in one of the long sides. Stuff a roasted/seeded (whole canned is ok, too) green chili with blue cheese, then stuff the chili/cheese into the steak. Secure the incision with soaked toothpicks (so they don't burn), then BBQ the steaks.

MMMMmmmm Good. Artery clogging, but good!

I bought some a couple of days ago with the idea of making either chile verde or green chile stew, that is until I read this thread on chowhound.com. Lots of links to great sounding recipes here. Hatch New Mexican green chile recipes Decisions, decisions.

Bumping this thread back up since the Hatch chiles are back in the stores. Anybody have any new recipes to share using these little jewels?

New Recipes, DW made a tortilla soup with Hatch Chiles. She put the tortila strips in early so they turned into dumpling.I like it this way rather than the tortilla strips added near the end. The fresh chicken broth and Hatch Chiles made this something to smack you lips over.

Just to let you know, Sept. 19-21, 2008 is the Chili and Frejole Festival in Pueblo, CO., celebrating CO's own special chilies. Anyone else going to be there?

Having lived in New Mexico I can tell you this for a fact,, the ones you get straight out of the farmers fields are soo different from the canned professional ones. The commercial canners buy whole farms of chilies and the chilies they buy are engineered to not be as hot or spicy as the real right out of the field old style chilies.. IF you are after the ordinal hatch Green chilies, got to get them from a real chilie grower.. Promise!!! do some digging and looking and don't substitute the canned******from the real thing,, it is a whole different thing.

Peel, seed, chop (if needed) and add to any recipe you have (except deserts like ice cream or pie - come to think of it I had apple pie with green chile and it was great)! The canned stuff will work in a pinch but it is much better roasted and frozen. I've even had green chile sushi and it is great!

Yep, I've done the apple pie with green chiles. Just looking for something new and different to try.
