We recently bought some pie irons and are looking for some good recipes. I been to all the web sites, but I just want your favorite. one thing we found is that if you use bread it taste like a grilled cheese sandwich, so we tried Pillsbury crescent rolls and everything tasted a lot better. So give me your favorite recipe to try. Thanks

These roll-ups have a crispy crust with a creamy center. You would never guess that you are eating bread. I have made the filling up at home to take camping with me. You will need to bring it to room temperature before using. I have made these in my Dutch oven and in a regular oven on a ungreased cookie sheet with low sides at 350 degrees for about 15 to 20 minutes when I need to make a lot of them or if I am in a hurry. I know you will enjoy these.
Enjoy! Debbie
Pie Iron Cinnamon Sticks

1 package(s) (8 ounce) CREAM CHEESE; Softened.
1 EGG YOLK
1 1/4 cup(s) SUGAR; Divided.
SLICED BREAD
2 teaspoon(s) CINNAMON
1/2 cup(s) BUTTER; Melted.
1/4 teaspoon(s) VANILLA
_____
In a mixing bowl; combine the cream cheese, egg yolk, vanilla and 1/4 cup sugar; mix well and set aside.
Remove crust from bread.
Flatten bread slices with your hand on a sheet of wax paper.
Spread the cream cheese mixture over each slice of bread to within 1/2 inch of edges.
Roll up bread diagonally from point to point.
Add remaining 1 cup sugar and 2 teaspoons cinnamon to a shallow dish; mix well.
Dip the roll-ups in the melted butter, then in cinnamon-sugar mixture.
Place 3 roll-ups in a pie iron, tucking edges in if bread is a little long.
Cook over a hot fire until roll-ups are golden brown and sugar has caramelized, flipping pie iron over once.
Flip roll-ups onto a wire rack to cool for a few minutes before eating.
Yields about 10 to 15 depending how much filling you use for each slice of bread.

We really enjoy pizza sandwiches.
Hobo Pizza
1 tube refrigerated pizza crust
1 squeeze container of pizza sauce
pizza cheese
Toppings (i.e. pepperoni)
Pre-heat pie iron until just hot. Generously spray inside of pie -iron with cooking spray. Put a square of pizza crust on 1 side, top with a little pizza sauce and top with cheese and toppings. Put another square of pizza crust on the top and put on the top of the pie iron. Close iron and cook a few minutes. Keep checking and turning until pizza crust is light golden brown.

This is our favorite too, but we use buttered bread slices instead of the pizza crust. We almost always use pepperoni because it is already cooked.

We do the above pizza ones using Bread and Pam-I even cook pizza sausage ahead of time and then warm it before using.
We also do Taco's-using either the cresent roles, bread or soft tortilla's.
Using Tortilla's you can expand your horizons-you can use taco fixings, quesidilla's, breakfast items such as eggs and sausage, just heat until the tortilla is a golden brown. Note: cut tortilla's in half so they fit in pie irons better.
We also do Grilled ham and cheese, grilled cheese (serve with Tomato soup). The newest one I heard the other day is: Browned hamburger, velveeta cheese and bacon crumbles to make a bacon cheese burger.
Our favorite dessert one is: Spread peanut butter on the insides of the bread, then place chocolate squares or milk chocolate chips and marshmellow's on top of the peanut butter. Spray pie irons with PAM, place the sandwhich on one side of the pie iron, closing with the other-cook until bread is golden brown-this is always a huge hit!
Half the fun of pie irons is experimenting with what you have in your cupboards or fridge! Have fun and good luck-let us know what you try!

Another dessert to try. Either bake or buy a loaf angel food cake. Slice thick--3/4" to 1"--and spoon blueberry (or cherry) pie filling in center. Toast until browned on both sides. Chewy and tasty. (I lightly buttered outsides of cake.)

If you put something in a sandwich that might leak moisture, either cover it with cheese, or use an oil base condiment on the bread. Pickles come to mind first.

We like to use the squeeze butter on our bread as it seems to toast better in the pie iron.
Our favorite dessert is white bread (cresent rolls would be good, too) buttered on the outside with cream cheese on both sides and a spoon full of either cherry pie filling or apple pie filling sprinkled with cinnamon. YUM!!
