1. Water!! Pressurize the water system to check with both the pump and city water connection.
2. Everywhere you can find a fitting or water line.

You probably mean the tent ends. On the 21SS, the front is easy to inspect but the rear a little harder. With it closed, get up under the tenting and look around the periphery of the door seal for daylight (go on a sunny day). Lightly push on the center of the hatch at the top to deform it the same way a bump might and look to see if you now see daylight. Check the top of the cabinet below for any signs of deformation or damage. If you are small in stature, you can do the same for the rear, but it's going to be a squeeze. Then open up the ends and examine the condition, length, and alignment of the hatch seals.
Knowing what I know now about how common leakage is for hybrids, I would make it a condition of the sale that the dealer perform a vacuum leak test as you witness it. If they want a sale, they'll do it because it is not that hard and they can eat the hour of service time.
FYI - I have it on good authority that a dual seal will become standard on the hatches in the near future.
Have the dealer do a leak test. They pressurize the inside and force air out wherever it can get out. Then they walk around (and on) the trailer and squirt soapy water anywhere you think it might leak. If you see bubbles, that means air is coming out and water will get in. Only place you shouldn't worry about bubbles is the little weep holes at the bottom of the windows.
I did this when I picked up my trailer from RVW. Nairy a bubble to be found and, as it turns out, no leaks. Cost me $100 and well worth it for the peace of mind.
