There are nice secluded sites at Buescher State Park http://www.tpwd.state.tx.us/spdest/findadest/parks/buescher/
or you might try Bastrop State Park, both within less than 3 hours.

Palo Duro is way out of the 6 hour range but there is nothing challenging about the entrance road in. Really an outstanding scenic park.

Like some of the others have said, try Bastrop State Park, Also you might like Fairfield State Park. If you go to Double Lake a lot then Fairfield is just another two hours up I45. It has a warm water lake (cools the power plant) and plenty of hiking trails and a lot of deer.
I also echo the Tyler State Park. It is very nice and there are plenty of things for the kids to do...fishing, hiking, bike trails. It has several camping loops and the two on the lake have full hookups.

Check out my signature photolink. I have lots of pictures and specifically what the campsites look like in most of the state parks mentioned here. If you are OK with the drive Palo Duro is one of the best parks in the state but zero fishing. Give some thought to Daingerfield in east TX. Nice big pines, lots of excellent sites, good fishing.

If it were me, I'd head for Goose Island SP at Rockport. Wonderful area, can camp either on the beach or amongst the trees, some are VERY private campsites. Good hiking and there are loads of places to explore in the Rockport-Fulton area as well as Port Aransas, not to mention things to do and see in Corpus Christie.

This time of the year, I definitely wouldn't head to NE Texas--weather can be "iffy" anywhere, but the potential for cold temps and even icy roads would deter me from that area! Of course, if I lived near Houston, I'd be at Galveston State Park every chance I had--and Mustang Island or Padre Island near Corpus for longer stays!

Hello SouthernGirl,
We are fairly new to RVing but loving it and loving Texas. We have camped at Cooper Lake SP (South Sulphur Division), Kerrville-Schreiner park and Palo Duro Canyon State Park.
Cooper Lake is about three hours from you. We don't fish but it has lots of fishing spots. The sites are huge and paved. Good hiking trails. Privacy should be fine. Might be cool.
Kerrville-Schreiner is in Kerrville (about 4.5 h from you)and used to be a state park. It also has fishing. I'm not sure it has the privacy you want but it is a beautiful park. Lots to do in the city and Hill Country in general. San Antonio (Riverwalk, Alamo!!!!!) is one-hour's drive south (a stone's throw in my books). Hiking in K-SP is great. Kerrville has decent shopping (so does SA!!!!). For a funky tourist town, don't miss Fredericksburg --- 30 minutes away. I rank this park very high.
PDCSP is 10.5 hours from you. It is fantastic for scenery, hiking and biking. Privacy might be okay depending on the crowd. We camped in the farthest loop. Fabulous park but mainly scenery, hiking and biking. I rank this park very high but watch for cold weather and there is not a lot of variety of things to do.
Other posters have mentioned parks which are on our list but we haven't hit them yet. We've heard lots of positives about Goose Island, Galveston Island (with some not so positive) and Tyler (could be cool in December).

You may want to look at Lake Texana state park. It is close, there is a lake for your kids to fish, the sites are isolated with lake views, there are hiking trails, bicycling, wild animals (deer looking for handouts and alligators in the lake). We have camped there many times and still consider going there each time we leave the stick house.
