I need help quickly. To-day we are invited to a Christmas Dinner and the host is serving brisket. I remember reading a good recipe for corn and frito chip on this site and thought it would be good to take but I can't find the recipe. Please post as soon as possible.

Hi,

I'm not sure if this is what you're looking for. A good friend of mine (TxLee) served it at our rally potluck and I posted the recipe.

Corn Salad

It's awesome, enjoy!

Don't put the fritos in until the last minute or they'll get soggy.

I took this to a potluck last week, doubled the recipe hoping there might be some leftovers to bring home but no such luck. It was big hit and everybody wanted the recipe. It was something new that they hadn't seen before. So easy and no cooking!

p.s. We didn't mix in the Fritos, just sprinkled the crumbled Fritos all over the top and let people mix their own as they took a scoop.

This stuff is really good! I made it on Thanksgiving and there was not a drop left and every one asked for the recipe. I am making it Sat night to take to my Sisters. Easy, good, what more could you ask for.

Miracle Whip is a tad bit sweet, so I'd think mayonnaise would be better with the other ingredients. I used light mayonnaise and it was perfect. Everybody wanted the recipe at our party, too. BTW, I don't have a food processor but do have a Vidalia onion chopper/dicer that I got on eBay. Worked great for the green peppers and red onions.

Thanks again for the Corn & Frito Recipe. It was a big hit at the brisket dinner to-night. Like everyone says you get to take an empty container home. I did like everyone said crushed the fritos in the bag and put them in the last minute before we ate. Yes, everyone wants the recipe.
I only had Miracle Whip and it was good but I think next time I'll buy light mayo. I didn't have a food chopper I did it the old fashion way just chopped finely.
