I won't give the recipe, I think everyone knows it, but I'm still fond of the old Tuna casserole.

Leo, I saw the same show. Here is his recipe.

Emeril's Twice Baked Potatoes

-10 large russet potatoes (about 7 pds.)
-1 stick + 1 Tblsp. unsalted butter, room temp.
-1 cup sour cream
-1/2 cup heavy cream
-2 tsp. salt
-1 1/2 tsp. black pepper
-3/4 cup bacon, cooked and crumbled
-1/2 pound sharp white cheddar, in 1/2 in. cubes
-3 cups mild cheddar cheese, grated
-1/2 cup finely chpooed green onions
- 3 eggs, lightly beaten
Directions-
1. Preheat oven to 400. Bake potatoes for an hour or until tender. Cool to the touch.
2. Cut potatoes in half and scoop out flesh into a large bowl. Add 1 stick of butter, sour cream, heavy cream, salt and pepper and mash until chunky-smooth. Add bacon, cubed white cheddar, half of grated cheddar, green onions and eggs, and mix thoroughly.
3. Butter 9x13 baking dish with butter and reduce heat to 375.
4. Pour potato mixture in prepped dish and top with remaining grated cheese. Bake for 35-40 minutes or until bubbly and cheese is melted.

Here's a recipe from today's show with Paula Deen's boys!

Deen Brother's Baked Mac & Cheese

-2 cups uncooked elbow macaroni
-2 cups shredded cheddar cheese
-2 cups shredded American cheese
-1 cup whole milk
-1/2 cup sour cream
-2 eggs
-1/4 cup unsalted butter, cut into pieces
-1 tsp. bottled hot sauce (opt.)

Directions-
1. Preheat oven to 350. Grease 9x13 baking dish. In sauce pan, cook mac according to pkg. directions, drain. Return mac to saucepan.
2. While mac is hot, add cheeses to the pan, stir well. Spread mac mixture in prepped dish. In a bowl, whisk together milk, sour cream, eggs, butter, hot sauce, and salt. Pour milk mixture over the mac.
3. Bake 35-40 minutes or until golden brown and bubbly. Let stand 10 minutes.

*Paula called in during the show and said, "You MUST add MORE cheese to the top."

I remember watching that and thinking, I can lighten that up with low fat versions of the additives, and turkey bacon, which I like.

I sometimes make the original or this recipe

2 cans tuna
1 Can mushroom soup
1 can celery soup
1 bag mixed vegetables
1 cup of milk or more if needed
1 bag egg noodles

About Five minutes before your noodles are cooked add the vegetables. Drain and add all the other ingredients.

The First Meal I cooked while courting my wife of 32 yrs.

Tuna Potato chip cassarole

1 cn tuna
1cn crm mushroom soup
8 oz bag potato chips

2/3 bag of chips in mixture, 1/3 crushed on top. 350 for 1 hr.
