My guess is they're boxed potatoes (those Betty Crocker Seasoned Skillets). We tried them once and decided they weren't for us.

For our meatloaf, we always add one Hot Jimmy Dean sausage pkg (8 oz) to 1 lb ground beef, use Italian Bread crumbs,and for moisture use an egg, half can of evaporated milk, 1/2 can(sm)tomato sauce, 1/4 cup catsup and dollop of steak sauce. Seasonings include basil, thyme, oregano, onion flakes, salt & pepper. Top mixture with a catsup frosting and bake! (Don't forget to pour off excess grease half way thru baking. Um-um good! They'll even want it for sandwiches next day - if there's any left!

Some how, I just can't imagine Debbie using box potatoes.

We tried them once and didn't like them either.

Sorry to burst your bubble, but she does. The reason I remember is because it was due to her mentioning them in this thread that I tried them.

Don't get me wrong, I wasn't suggesting there was anything wrong with it. Just stated that's what the ones in her picture looked like, in response to the other poster's query, and that they weren't for us. To each their own.

This meatloaf would be wonderful SMOKED. I've never done it before a year ago and smoked meatloaf is fantastic....any recipe you want, smoke in foil tins with holes poked in them for 3 or so hours at 225F with a nice mild wood like apple.


Wife drives it FAST, hubby fixes it when it breaks.

old guy, Those potatoes are from scratch. I take some potatoes and slice them thin with a mandolin. I then fry them in some butter/oil with coarse ground pepper, garlic powder and some onion salt until potatoes are tender. Debbie

RVRoadWarrior, You were close. I do use those boxed potatoes out camping from time to time. My son loves them. Debbie

Does anyone else use the loaf pan simply to shape the meatloaf, but then bake it free-standing on a rimmed baking sheet?

Seems better that all the grease isn't trapped in the loaf pan.

I have baked meatloaf free standing in my dutch oven before, but this meatloaf is a little soft and may not hold up well to the free standing method. Using a good lean ground beef does help with all the grease.

keywestrv, I should have asked for one for Christmas. What was I thinking.

I use 1/2 - 3/4 lb. hot breakfast sausage and 1 lb. ground beef. Add the egg and stuffing mix and a little milk or water - Use the rest of the sausage and make a white gravy (like for biscuits and gravy) and serve over the meatloaf. I don't use any cheese or onion soup. I usually don't cook in a meatloaf pan because it is too greasy.

Thanks for the suggestion to smoke the meatloaf - I bet that would be very yummy.
