IMHO Fort Wilderness is a high priced rip of but I don't go to Disney so would not go to Ft. Wilderness either.
The OP asked about State Parks in the area and there are two that I know of:
Lake Louisa State Park off Route 27 in Clermont. Have not stayed there but have driven through and it looks like a nice place.

Wikiawa State Park in Apopka is a very nice, quiet Park with water and electric and dump station. Most of our State Parks do not have sewer connections but are reasonibly priced and nice places.

I understand the prices are like $22.00/night and one can stay up to 14 days.

Florida State Parks are reservationed by Reserve America. You might check Google for info on the parks and then go to RA for the Reservations.

We were in a similar situation last year. We decided in January to go to Disney for spring break, and of course could not get reservations 3 months out at Fort Wilderness. We wound up staying at Lake Magic RV Resort.
