We do kinda as SkiDood...
We use a coffee pot that brews right into an insulated carafe. As soon as the coffee is brewed, the machine goes back in the cabinet and the carafe stay's hot for a couple of hours. We bring keep it inside or bring it outside, no hotpad necessary... works great!!! You can find them anywhere for a reasonable price (Wally world, Linen-n-things, etc.)

We use a French press stlye maker. Works for me and I feed the campsite with my coffee grounds.

Garage sales and antique shops are good sources for stuff.
I found one of the old clear glass percolators. Works on the stove top. Looks cool too 
When traveling it gets two paper towels, one in the bottom, then insert the innards. Second one goes on under the lid. No glass to glass contact when stored.
Also found a really neat thermos. One of the old Aladdin stainless steel ones that were put on AF transports. It has a spout in the lid. Turn the thermos upside down and open the spigot to fill the cup. You can also mount it upside down if you have space.

We use a smaller Mr. Coffee, the 4 cup version. Makes coffee pretty quick, and it's cord is just long enough to plug in underneath the cabinet. Place it in the sink when traveling.

I like this one from Coleman. It's not an under the counter but it works well. It takes about 20min to brew a full pot. You do need a carafe or thermos to pour the coffee into after it brews.

I have the same Black & Decker model that Gypsymoments has. It replaced another B&D SpaceSaver coffee maker that I had for at least 15 years and still worked fine but I couldn't get a suitably-sized replacement caraffe when the original broke.
The replacement model I bought didn't work right out of the box (clock gained over an hour per day). I took it back to Sears and got another one since I couldn't find anyone else who makes an under the cupboard model. It's still working but I've only had it for 4 months. I had to disable the 'sneak a cup' feature to prevent coffee from running on the counter. This maker is poorly designed and very poorly constructed compared to my old one and I wouldn't recommend it. Based on what I've read after-the-fact, Gypsymoments must have got an exceptional unit built by the A-team, on a good day...

I would not recommend any under-the-cabinet coffee maker as the steam and heat from it will damage the cabinets. We use a Hamilton Beach Brew Station. Takes up minimal space on the counter.

We use an old perculator. We also use perculator-specific filters so clean up is a non-issue. Nothing tastes better, IMHO. I would be really worried about the steam damage from an under-the-conter model.
