You may also want to make sure your hitch receiver isn`t flexing. I believe 04 is one of the years the GM receivers had flexing problems!
And make sure you have the proper tension on the bars, they will be very tight! I raise the TT and truck with the tongue jack after latching the ball, this makes it very easy to put the bars in place!

This was my thought as well. Your truck should not drop 2" in back. It should sit level, as it does unhooked. But it won't, if the hitch is not doing what is supposed to. Some of the GM hiches do more than flex. Some break. Many on here replace them with after market hitches.
Other than the flexing of the trailer hitch, these is also an issue on GM 4X4 trucks front suspension where the rubber bump stops interfere with leveling.
