Have you tried this from Kraft Foods? It is easy to make and change per taste. I have added mushrooms, onions, celery, ect to the stuffing mix. Crumble some turkey bacon on top if you like before cooking. Can also be made and put in the crock pot. Lynne
Stuffed Chicken Rolls
From Kraft Foods
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1 cup water
2 eggs, lightly beaten
6 small boneless skinless chicken breast halves (1-1/2 lb.), pounded to 1/4-inch thickness
1 can (10-3/4 oz.) condensed cream of chicken soup. Fat free works too. Add more soup if you like more of the gravy.
1/2 cup milk
1 tsp. paprika
PREHEAT oven to 400°F. Combine stuffing mix and water in medium bowl. Let stand 5 min. Stir in eggs.
PLACE chicken, top-sides down, on large cutting board; spread evenly with stuffing mixture. Starting at one of the short ends, tightly roll up each chicken breast. Place, seam-sides down, in 13x9-inch baking dish. Mix soup and milk; pour over chicken. Sprinkle with paprika.
BAKE 30 min. or until chicken is cooked through (170°F).

How To Pound Chicken Breasts
Place 2 of the chicken breasts in large freezer-weight resealable plastic bag. Pound chicken with the side of a heavy can, rolling pin or meat mallet until chicken is 1/4-inch thick. Remove chicken from bag; set aside. Repeat with remaining chicken breasts.
Great Substitute
Omit milk. Substitute 1 jar (12 oz.) chicken gravy for the canned soup.
Prep Time: 10 min
Total Time: 40 min
Makes: 6 servings

Haven't tried it yet, but it sound easy and good, so I plan on trying it in the cockpot on our next trip out. I'm printing the receipe now. Thanks

if you are in a hurry,you can get some very thick slices of baked turkey breast at the deli and use that. cover with low sodium gravy of your choice. Decrease the baking time somewhat.

Great idea Leo, pounding space would be a challenge in the camper.

Instead of pounding the chicken breast, I will cut mine in half while they are still PARTIALLY frozen, then just roll the chicken with the dressing inside.

I've used that method with a chicken schnitzel dish I make. Works just fine, its a bit "different". I have found that slicing while partially frozen seems to work better than pounding with the "indivdually" frozen (water added ) chicken breasts.
