I've done this in a Dutch oven (In the oven), and I made them camping last weekend over charcoal in my 12" Dutch oven. They tasted equally great both ways. I'm sure they would work in a crock pot just as well too.

2-3lbs Bone-in or Boneless Country Style Pork Ribs (I've used both)
1 cup catsup
1/2 cup brown sugar (packed)
2 tsp prepared mustard
1 tsp salt
1 lemon (sliced)
1/2 cup onion (diced)
1/2 cup water
3 Tbsp. Worcestershire sauce
1-3 cloves of fresh garlic (minced)

1. Pre-heat cast iron Dutch oven to 300-350?
2. In a pan with some shortening, brown ribs on all sides.
3. In a bowl, mix all other ingredients except for the lemon slices and mix well.
4. Transfer meat into Dutch oven and pour sauce mixture over the top.
5. Add lemon slices to the top and bake for 2 hours.
6. Remove cover and bake another 30 minutes.

I usually brine the ribs in salt water for a few hours prior to cooking.

It doesn't get much easier than this.

OP's same recipe with beef roast = yummy too.

Add some extra mushrooms and carrots and you're in business!

Something I like to do with pork (chops, loin, or ribs) is put 2 cans of kraut in the crockpot and put the pork (I brown it a little first either under the broiler or in a skillet)on top. Add small amount of water (1/4 - 1/2c) and cook on low 6 -10 hours until pork is tender. Smells terrible while cooking but the flavor of the pork fat & juices flavor the kraut like you've never tasted. Much milder!!!

Mountain Mama....my mother-in-law does the same thing with the kraut and pork. She makes her kraut homemade. That is one of my all-time favorite pork dishes. Just phenomenal flavor.

We also do this recipe with Arm Roasts. It makes a great gravy mix
