I was given a tube of polenta. I have never used any...got any favorite recipes?

It's just corn meal mush. Cut into 1/2 slices. Fry in butter. Serve with anything you would serve with hush puppys.

My wife slices it 1/2" thick smothers it in black beans,seasons it to taste (we like it spicy) and bakes it. I am a meat and potatoes guy,and this is always good and satisfying.

Wow I haven't had that in a while. I used to bake it in the oven for the recommended time then cover it with a good pasta sauce and a side of Italian sausage. I'd cook it a little higher temp than normal and spray it with olive oil to make it crispy. You're making me drool, gonna have to have some again soon!

Well, I sliced it, wiped with EVOO and baked it for 20 minutes. Then covered with sauteed zucchini, onions and peppers. Added tomatoes and spices. Topped with sliced mozzarella and parmesan cheeses. Baked another 15 min.
Yummmmmmm.....

Is there anyone out there that can tell where in the south I can find polenta? We don't have a lot of choices of grocery stores where we live, but I'm in Montgomery AL now and would love to try this thing called 'polenta'. Thanks.

Polenta is very simple to make.
1 Cup yellow cornmeal
3/4 cup water
3 1/4 cups boiling water
1 1/2 tsp salt
Mix cornmeal and the 3/4 water in 2 qt saucepan. Stir in the 3 1/4 cups of boiling water and salt. Cook, stirring constantly, until it thickens and comes to a boil. Reduce heat, cover and simmer 10 minutes, stirring occasionally, until very thick. Remove from heat and stir till smooth. Pour into a pie plate and allow to cool. This can then be sliced, topped with whatever you what, and baked/grilled.
