We have a Norcold but I don't have the manual in front of me. What does it say about the light blinking once every 3 seconds?
You say now the problem only occurs on AC? If so, don't overlook a Converter problem. You don't say what kind of motorhome it is but we have an Itasca Navion and there was a rash of bad converters installed in them. Several of us had really weird fridge problems. The refrigerator control board is sort of sensitive to weird voltages. The only other symptom was the levels indicator would show one level too high for everything when plugged into AC.

I had that issue once, I forget where the fault codes are listed, but the blinking light generally indicates an issue such as out of level operation, etc. You get once chance to reset it (via power switch) and then you have to do a trick on the circuit board to do a hard reset. You can find information on the net somewhere by searching for Norcold Reset. You will need your model number. According to the service doc, that is probably bad or disconnected thermistor (controls temperature). From the manual;
Backup Operating System (BOS)
The backup operating system (BOS) is an
electronically controlled duty cycle that maintains the
refrigerator in operation if the thermistor is
disconnected or fails. The BOS maintains cooling by
timing the length of time the heat source is energized.
When the refrigerator is operating in BOS, the length
of the cooling cycle has to be regulated manually
using the TEMP switchbutton.
When a colder temperature is desired, changing the
temperature setting to a higher number provides
additional cooling by lengthening the cooling cycle.
For example, if the temperature setting is set to 5,
raising the setting to 6 will lengthen the cooling cycle.
When a warmer temperature is desired, changing the
temperature setting to a lower number shortens the
cooling cycle. For example, if the temperature setting
is set to 6, lowering the setting to 5 will shorten the
cooling cycle.
N61X/N81X Backup Operation.
When the N61X/N81X controls shift to BOS operation,
the ON LED (green) flashes once every three seconds.
