We are planning a blueberry fest at church- baking/making and selling/serving anything with blueberries. (pies, jams, cakes, muffins, bars, smoothies, etc.)

Packed with Anti-Oxidants! Throw in some walnuts and you have 3 of the 4 food items with the most antioxidants! Hope you have a great fund raiser!

Here's a GOOD one that I've made a few times. Coincidentally, my co-workers were just mentioning the other day that I hadn't made it in a while (hint! hint!)

Blueberry Tea Bread

2 cups all-purpose flour
1 cup sugar
4 teaspoons baking powder
1/4 teaspoon salt
1-1/2 cups fresh blueberries
2 eggs
1 cup milk
3 tablespoons canola oil
1 teaspoon grated orange zest
confectioners' sugar

Preheat oven to 350°F, and lightly grease a 9x5-inch loaf pan.

In a large bowl, combine the flour, sugar, baking powder and salt. Stir in the blueberries.

In a small bowl, beat together the eggs, milk, oil and orange zest. Add all at once to the flour mixture, stirring just until dry ingredients are moistened. Turn into greased loaf pan.

Bake at 350°F for one hour or until cake tester inserted in center comes out clean. Remove from oven and cool 10 minutes on rack, then remove from pan and cool completely. Sprinkle top with confectioners' sugar before slicing.

**I have also made this in a bundt pan and it comes out just as yummy!**

Okay, I couldn't resist one more! This one is richer, while the Tea Bread is lighter. Both are excellent. I love blueberries and I just discovered that my 2 year old grandson does too. ENJOY!

Quick Blueberry Pound Cake

1 package yellow cake mix
1/4 cup white sugar
3 eggs
1 (8 oz.) package cream cheese, room temperature
1/2 cup vegetable oil
1 teaspoon vanilla extract
1 1/4 cups blueberries

Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 10 inch Bundt pan.

In a large bowl, stir together cake mix and sugar. Make a well in the center and pour in eggs, cream cheese, oil and vanilla. Beat on low speed until blended. Scrape bowl, and beat 4 minutes on medium speed. Stir in blueberries. Pour batter into prepared pan.

Bake in the preheated oven for 40 to 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.

Bananaberry Bread

1/2 cup (1 stick) butter, softened
2 eggs
3 or 4 medium mashed ripe bananas
1/2 cup buttermilk
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup fresh or frozen blueberries

1...Heat oven to 350* Grease bottom of 9" loaf pan
2...Stir sugar, butter, eggs, bananas and buttermilk in large bowl until mixed. Stir in flour, baking soda and salt just until moistened. Stir in blueberries. Pour into pan.
3...Bake about 1 hour 15 minutes or until toothpick poked in center comes out clean. Cool 5 minutes. Loosen sides of loaf and remove bread out of pan. Cool completely. Makes one loaf...

This is sooooo good and moist. I've made this with our grandchildren at our annual "Craft Day" in November. Hope you try it and enjoy it also!

Hi, Cindy. Every year I go to Lyman Orchards in Middlefield, CT and pick dozens of quarts of blueberries; my favorite summertime activity (next to fishing and camping).

I cannot do better than this old family recipe, from my first MIL, who got it from HER grandmother. A very old New England recipe, as you see.

Grammy's Blueberry Cake

Oven 400*

2 cups flour
3 tsps. baking powder
1 scant teasp. salt
3 TB butter
3/4 cup sugar
1 egg, beaten in a 1-cup measure; add milk to make 1 scant cup

Sift the dry ingredients into a bowl. Add the butter and sugar and mix in as for a piecrust, using fingers or a pastry blender.
Stir the milk mixture into the flour mixture, keeping the mixing to a minimum. Gently stir in:
1 1/2 cups fresh blueberries

Spread in a well-buttered (I use baking spray) 9x9" pan. Sprinkle with cinnamon sugar (I use about 1/2 cup sugar mixed with 1 1/2 tsps. cinnamon)
Bake 35 to 40 minutes and eat warm. YUM!

My mom has lots of blueberries and has picked upwards of 50 lbs already this year.
I made a peach/blueberry cobbler.

A cup or so of each type of fruit
1 cup of self rising flour
1 cup of milk
1 cup of sugar

Place fruit in the bottom of a sprayed 8x8 pan. Mix the rest of the ingredients together and pour over top. Bake at about 375 until "golden brown and delicious". Took about 45 mins or so for mine. This is a variation of the cupa, cupa recipe as I was told it was called.

I make chocolate blueberries - just take any chocolate sauce you find in the fruit section, place several blueberries in a muffin tin with a paper cup. Pour a small amount of chocolate over them (enough to cover), let harden. They are WONDERFUL!!

This sounds great- thank you! I never thought of combining bananas and bleuberries but will make it for sure.
