In Louisiana, just because the water looks stagnant, smells and holds crawfish, does not mean it is polluted, unless decaying plant matter is pollution. As mentioned earlier, if the water is polluted, there will probably not be any crawfish around.

It appears to me that the most commercial crawfish I have seen in LA come from flat land that was or is probably rice land. That water is not polluted, just muddy. If you like boiled crawfish you would most likely love fried crawfish. But, I should not have said that! I10 MM 124 LA is a good place to start lookin'!

Once again "joloote" has found a way to knock Louisiana. Evidently the 6 yrs, he lived here were unpleasant. Probably just never understood being a Cajun is a state of mind, not just "eaux" on the end of your name. One thing for sure is that crawfish don't just come from stagnant polluted water. Atchafalaya Basin come to mind? But how do you catch them, using melt in the net/trap, which is dried blood and whatever. But if you want to mention scavengers lets talk about crabs and catfish, those 2 will eat just about anything. Pretty tasty eating in my book.

I always thought the Louisianan Cajuns were French-Canadians (Acadians) who moved down (evicted by the British) to Louisiana after the British defeated the French to take control of New France, which became part of Canada in the 1750's-1760's. The Cajuns (Acadians) were from Acadia in Canada, which eventually became the Maritime provinces.

I think at the time Louisiana was a French colony before eventually Louisiana became part of the USA and this is why the Cajauns or Acadians moved down to Louisiana as at that time it was French.
