There's a flan cake recipe posted here somewhere too. It's excellent.

. . . and for a VERY easy birthday cake, try

Pastel de Tres Leches (Three Milks Cake)

Bake a white or yellow cake of your choice in a 13" x 9" pan. When cooled, use a regular fork or a meat fork and punch a lot of holes in the cake. A LOT of holes. Punch a few more holes. And maybe a few more! In a separate bowl (preferably with a pour spout), mix equal amounts of milk, sweetened condensed milk and evaporated milk. (I use skim milk and fat free of the other two). Mix together very well and pour slowly over the hole-punched cake. Allow the milk mixture to soak into the cake. Frost with whipped cream (I use fat free). Add decorations to the top - I have used those tiny colored ball decorations and have seen flowers made of mandarin oranges as the petals and a maraschino cherry as the center.

This cake is best if made the day before and allowed to "mellow" in the fridge overnight. It is a VERY moist cake with the milks added. Very tasty IMHO.

I got this recipe off this board but for some reason, a search would not bring it up. It's an excellent cake:
FLAN FCAKE
1 box cake mix plus all ingredients it calls for (eggs, oil, etc).
I used a yellow cake mix
1 can sweetened condensed milk
1 can evaporated milk
4 eggs (in addition to those required by cake mix)
1 jar Cajeta Quemada- ~11 oz.(this is a milk caramel spread made with goat's milk. I could not find it and used a jar of caramel ice cream topping. The recipe also advises you can use dulce de leche)

preheat oven to 350, or temp on cake box
spray bundt pan with non stick spray
pour in the dulce de leche or caramel
mix cake batter according to directions
pour cake batter evenly in pan
in a separate bowl, mix 4 eggs, condensed milk, and evap milk.
pour this liquid flan mixture on top of cake batter. The bundt pan will be very full
let sit for 15 minutes. The flan mixture will travel down thru the cake layer
bake as directed on box, around 45 min.
remove from oven and let cool as long as possible- a couple of hours, to overnight, is best.
invert cake on cake plate. the caramel sauce will pool in the middle and around the edges. I used a cake plate with a rim to catch it. You can spoon the caramel back over the top, or onto each slice.
***my notes:
excellent cake. Base layer is cake, then the flan (custard), then the caramel. I wouldn't unmold it until right before serving because the caramel does eventually run off the top.
Beautiful for a party, very impressive looking.
this recipe is a keeper.

THANKS EVERYBODY! Lots of great ideas and suggestions to work with, which is exactly what I needed! (P.S. Not to worry Garcias, I actually WILL serve some beans and rice, I just wanted the suggestions on this thread to be OTHER ideas like salads, etc...)

The desserts sound wonderful too, I hadn't even gotten that far, but it IS a birthday so a special dessert is definitely in order. THANKS again everyone, I know I can search allrecipes or other websites, but the gang on this forum always comes up with great ideas AND I don't have to search through a million recipes.

You all are the best! I bet my Mom would love it if you all came to the party! Happy Sunday!

Cream Cheese Seafood Dip

1 Brick Cream Cheese
Cocktail sauce
Bag Small Shrimp
Crab Meat

Place cream cheese in the center of a serving plate. Mix sauce and seafood in a bowl, like mixing a giant shrimp cocktail but with a little more sauce. Pour over cream cheese. Serve with tortilla chips. Serve cold. This is ALWAYS a big hit at any event I bring it to.

Spanish Rice

You can make Spanish Rice (I know, you originally posted that it was too boring) and kick it up with shrimp, crab meat, scallops, stewed tomatoes, jalapeño, etc.

My Black Bean & Corn Salad

Make a day before for best results.

2 cans black beans, washed and drained well. Do gently to not break beans
1 can summer crisp yellow corn, drained well
1 large red bell pepper, diced
1 large green bell pepper, diced
½ medium size red onion, diced
1 bunch of cilantro chopped fine/coarse
juice of 1-1/2 limes
olive oil ¼ cup or to consistency of liking
salt and pepper to taste
2-3 tbs honey
2-3 serrano chilis finely diced


BBQ Pork & Beans

3 sm cans pork & beans, drained just a tad
1/2 lb bacon fried, but not overcooked
1 large green bell pepper diced
1 large onion diced

Fry the bacon until almost done, add salt, pepper, bell pepper and onion and fry a few more minutes then drain. Add this to the pork & beans.

Then add a 1/2 cup ketchup, 1/2 cup dark molasses, one light handful of brown sugar. The the final step is chipotle powder to the desired heat level. Let set and simmer.My Black Bean & Corn Salad

I make it up and allow it to sit in the fridge while I prepare the rest of the meal


Both retired. 1 year until son finishes college, then financial freedom! We lost Max, the Schnoodle after 16 wonderful years but now enjoy Nicklaus Von Schnoodle (Nicky), who is a full time job. Our new Allegro Bay 34 XB is wonderful.
