Super noob question:

Is there such a thing? I have been filling the fresh water tank until I see it spew out of non pressurized filler (not the city water connection) on the side of the trailer. But....I started to wonder if I that is the right way of doing this. I have noticed some moisture around the "bladder" on the floor of the trailer. Not a "significant" amount of moisture. But...any moisture on the floor of trailer does catch my attention.

Thoughts?

I usually never fill the fresh water tank full, but I do the same as you when I do.
It's easier than going inside to check the gauge every few minutes.
You might want to check the fittings from the filler to the tank and make sure they are tight, but don't over tighten!
I have never found water anywhere around the tank.

On some, when you allow it to overflow it will create a vacum and drain a portion of the tank.

I fill it like you do. Until it overflows and gets my shirt wet.
The moisture is probably condensation. Cool(water) in contact with warm moist air. Just like the condensation that forms on your car windows.

That's what I like about my MH, it has a small bay door in the back that gives access to the water pump and a nice view of the water tank.
So to conserve on weight I can fill it just half way and can watch while I am filling it.

My water fill area has a vent from the tank that is right next to the inlet. As you fill the tank the vent makes a gurgling noise. When the noise stops the water level is above the vent at the tank which means the tank is full and it's time to cut the water off. I don't know where the vent is on other rigs but there has to be one somewhere.
