There is no flooring more beautiful and rich looking as a hardwood floor that matches your cabinetry. That gets my vote.

In a motorhome, there is so little square footage, it can't be that hard or expensive installing pre-finished planking yourself. You only need to rent a miter saw for the day. Install it wherever you are parked.

Curious, what is under the carpet?

When we bought our '89 class c last year it has carpeting throughout. It was explained to me that at the time it was built, Triple E put a sheet of lino down once the platform was constructed and built tthe moho on top of it. With two kids and a dog, I really did not want to deal with carpets while camping.

I took a look in the lower cabinets and there was lino in them. We had the dealer tear out the carpet and the lino was as new underneath. although it is a no wax flooring, I waxed it the other day and it truly shines.

Another option is Traffic Master Allure, it looks like wood/laminate, but is vinyl and is quite easy to install and maintain. The floor is also waterproof.

Some laminates are not rated for wet rooms and should not be used in the kitchen. Again for me with kids and pets, any room is potentially a wet room.

I pulled up a section along the wall, and beneath the carpet is some padding and under the padding is plywood/composite board. The section I saw seemed to be in good shape (no rot, etc).
