i have both turtled and opened bunks while still attached. it is both correct that you will want to level side-to-side for comfort, and that you probably will be unlevel front-to-back. that is unless your site has a slight slope up towards the back. then you just might get it level.
utilizing both front and back stabilizers is a good thing. once i only deployed the back ones and found that the trailer still rocked just a bit due to the truck springs.
as for deploying the front bunk - not everyone can do this, depending on the size of your bunk and how far from the bumper your hookup is. this would be something you just need to try to see. just be sure to get everything out of the back of your vehicle that you need for the night if it is enclosed.
if you decide to turtle perhaps one person could sleep on the couch while one sleeps on the folded down dinette? another idea is since you have a slideout you could use one of those blowup pool rafts as a mattress on the floor for a quick bed-on-the-go.
I always unhook but that's just me. We often stay turtled for those one nighters and plan to do so next week on the way to Destin. Be sure to disconnect the trailer electrical connection from tow vehicle. Depending on your wiring setup, you could possibly run down your TV battery. Also, you don't want to plug in your shore power while pluged into TV as it could damage TV electronics.
I agree with Chuck on account of safety. The few times I did this, I raised the hitch just high enough for it to clear the ball. And that also stops the noise caused by the truck suspension every time one moves in the trailer.

I have seen plenty of TT parked at our local Walmart with slides out and still hooked up, this is why I thought it would not hurt anything but I would like to know what would happen if HTT is not level and slide goes out. We will stopping at a CG on our trip so I am not worried about it. I am thinking even when we stop for rest or meals you do not put slide out. Just use it with slide in and then leave although the time to put slide out is prob not worth the time anyways.
