As a buddy once said to me "a breaker only protects the wires that go away from it." Made sense, so that would mean the only wire that will be at risk is the one from the outlet to your breaker box.

So If everything was turned on and running in the RV would the "total draw" be more then 30amp from the breaker box to the pedestal?

The OP is going from a 50 amp pedestal to a 30 amp coach he can not draw over 30 amps without tripping his coach 30 amp breaker.
If for some reason his power cord shorted out the 50 amp power pole breaker will trip.
