Carolina Caviar (Southern Living Ultimate Quick and Easy cookbook)
This stuff is absolutely addictive and awesome!!!
2 15.8 oz cans black eyed peas rinsed and drained
1 16 oz bottle italian dressing
1 11oz can white shoepeg corn drained
1 large firm tomato chopped
1 green bell pepper chopped
1 small onion chopped
1 cup fresh parsley chopped
4 green onions chopped
1 tbsp chopped fresh cilantro
2 garlic cloves minced
stir together all ingredients in a large bowl, cover and chill 8 to 24 hours. makes 8 cups
Once you start eating this stuff it is hard to stop!!!

I know that Julie Mik has a great salsa recipe that she has shared here before. I have made it for a couple years now. I don't have my copy of it here at work.

Have you ever tried FRUIT salsa? Mix, finely chopped strawberries, finely chopped kiwi , and finely chopped pineapple(pineapple tidbits in a can, drained). Add a small bit of fresh lemon/lime juice and a small amount of the reserved pineapple juice, if desired. You can even add some chopped fresh mint.
Serve with "chips"; which are fresh flour tortillias(cut into wedges) and are flash fried,drained on paper towels, and dusted with cinnamon sugar as soon as they come out of the oil.

Here is my Mom's salsa recipe that she won 1st place in a salsa contest with.......I'm sure she'd kill me for posting it but.....ah what the heck
1-32oz can crushed tomatoes
3-4 Jalapeno peppers (to your taste)
1/4 medium white onion
3/4 bunch of cilantro
2 tsp salt
1/2 tsp garlic powder
Boil jalapeno's for 5 minutes then remove stems and seeds..........Blend or food process together all ingredients until smooth.....pour into a large bowl and stir in additional ingredients.......chill before serving.

3 or 4 Plum Tomatoes
half a large onion
Bottom half of 2 or 3 jalepeno peppers
Juice from half fresh lemon
a few sprigs of fresh parsley...I like it better than cilantro
Now the most important part. Use a crank type hand chopper. Because a food processer chops it too fine.

The party was a success and (thanks to all of you) my dish got rave reviews. We have another party on Monday for someone who is moving away. I guess I'd better start planning what I'm going to bring.
Thanks again for all of the salsa recipes. I LOVE chips and salsa to munch on, so I will definitely be trying all of them.

Powder Puff and NM Campers have the right recipe! This is great habit forming stuff.
I usually buy about 6 jalapeno's I remove the tops and put them in the food processor. I remove all but about a tablespoon of it and put it into freezer bags then I freeze it. I use the jalapeno in the processor to make one batch then I have pre-chopped jalapeno ready to go for future batches. I defrost some and start all over!

I know this is a little late but I only have internet service on weekends as I'm using my cell for internet service. Try this simple salsa. It's great on sammies too...
3 cups cabbage (chopped)
1/3 cup tomato (diced)
1/3 cup onion (diced)
1/3 cup pickled jalapeno (diced)
3 Tbs pickled jalapeno juice from jar
4 sprigs cilantro (chopped fine)
1/2 tsp lime juice
salt and pepper to taste...
I use Mezzetta brand jalapeno's as you can get them mild or hot... Wife likes the mild best...

Good grief,, what a bunch of wimps!! LOL LOL LOL
She wants salsa,,, ok here goes,
This recipe works ok uncooked but is better if you at least roast the peppers and the tomatoes.
Take as many tomatoes as you think you need…
If you don’t want to roast them, at least put them in a non stick skillet and toast till the shins start to blacken..
Do the same with Serrano chilies,, NO canned jalapenos .. Fresh Serrano chiles or if you must, use fresh. Jalapenos
Carefully take off the blacked part of the tomatoes and chilies..
Chop, do not put in blender. And after you chop it all, save and use that juice and seeds,
Start off with three tomatoes and say two or three peppers. Chop your onion into smallish pieces and start putting all that together,
I use crushed real garlic but use what you want.
It also needs some cumin,, just a small amount and black coarse ground pepper, use your grinder or coarse ground you got in the cupboard. I add in some fresh cilantro, pull apart with your hands.
Now once you have that all tossed in the bowl, get a chip and taste it.. Adjust with more Serrano or onion as needed or more tomato. Don’t over toss it or blend it, leave it chunky.
If it gets too spicy hot, you can kill some of it with salt. Not much. And as good as your sauce is,, you can ruin it with off the shelf Doritos,, with all the salt on them… Get real Mexican chips or make your own with corn tortillas toasted in a skillet or over an open flame and cut/break them up. NO salt, it kills the spicy fresh taste.
When you get real serious about wanting real Mexico dishes,, ask me, my neighbors are from Central Mexico and I can fix you up.

1/2 of a red onion
1/2 of green pepper (seeds removed)
juice from 1/2 of a lime
Cilantro & jalapeno to taste
And as Vulcaneer says "Use a hand crank type chopper"
