I made these tonight to go with ham and cabbage and they are sooooo good,crisp, cold and flavorful. I think I could have eaten the whole bowl myself. They are better with fresh out of the garden cucumbers but good with any.
Creamy Cucumbers
1/2 cup dairy sour cream or plain yogurt
1 Tablespoon vinegar or lemon juice
1 teaspoon sugar
1 large cucumber thinly sliced
1 small onion thinly sliced
1/4 teaspoon dried dillweed (optional)
1 teaspoon salt & dash of pepper
Stir together the sour cream,vinegar,sugar,salt,pepper and dillweed(if using).Add cucumbers and onion slices toss to coat.Cover and chill for 2 to 48 hours,stirring often. Stir before serving. Makes 6 side dish servings.

My mom made something very similar. She put the cucumbers and onion pieces in salt water to soak for awhile before rinsing and adding milk (in the place of your sour cream or yogurt) and then adding just enough vinegar to make a little curdling of the milk. She added sugar, salt and pepper. I still make this today, but will have to try the sour cream.

My grandmother made it with evaporated or sweetened condensed milk. Was always one of my favorites.

My Mom used to make something like this when I was a kid. Never paid attention to how she did and she has been gone for a long time. Glad you posted the recipe so now I can make it myself. Thanks.

One of my best friends makes almost this exact recipe for me a few times a year, I agree, I could eat these until I exploded! lol

This is just about my favorite recipe in the world. I also can eat and eat and eat cucumbers made this way, and I do all summer long, as long as I have the fresh cukes out of the garden. (I also do not measure) Mine would never last long enough to wait for it to chill for any amount of hours!
Now you have gone and made me hungry for creamy cucumbers!

I made it this weekend and it was so good. I used one of those big English cucumbers that are seedless. They are on sale and I am going back to the store to more cucumbers so I can make this again. Thanks for the recipe.
