To answer the grease splatter question how about trying the plastic that painters use to protect the baseboard it comes with blue tape attached and unfolds about 3 or 4 feet, sorta like hanging a curtain on the side of the trailer.
Why doesn't she cook on the other side of the table? or is the table setting one end toward the trailer? then move away from the trailer.
And last have her clean the grease off the trailer, but then she may stop cooking and you will have to, never easy is it?
EZ UP is a brand name for awning, such as Pepsi is a brand name for cola. This type of awning is much easier to put up versus one with a bunch of poles. Mine is a 10 x 10 and I think I paid around $79 for it 3 years ago. I recently saw one on sale at Dick's Sporting goods for $49. One of the best things I ever bought for camping.
#1 I'd probably use the aluminum BBQ shield that I have for my LP BBQ. The second option would be to do nothing and just wipe down the side of the TT each time. If you don't like either of those, then try putting on a few square feet of 3M paint protection film. A number of folks sell small pieces of the stuff on eBay.
#2 We use the levels that CW sells. One level has a scale for side-to-side leveling, the other for front-to-rear. I set Legos under the low side according to the number indicated on the side-to-side level. If the Legos are too much or too little, then split them so one of the wheels gets one more Lego than the other. Then, level front to rear with the tongue jack. I also carry a small Sears electronic level that reads out in inches of slope per foot as well as other scales.

I put a folding table I use at a right angle to the trailer. Newspaper goes under the electric frying pan and I have never noticed any grease from it going onto the TT. The pull down stove top has metal wings on the sides and and
back. I do not use it to fry on so have never had any splatters there but I do Baby Wipe it off after each use.

Lined up with the siding means nothing, what if the siding wasn't hung level? Don't go by the siding or any other decal or mark on your trailer. Once the fridge is level in both directions apply the levels so that they read level as well no matter to orientation to the exterior of the TT.

I thank everyone for their expeditious replies! Here's a solution for the grease: Use an el-cheapo painters drop cloth, cut into sections, and use cheap masking tape to hang it up. When done, or breaking camp, just trash that used material. Re: Levels. What's the model # of the Sears electronic level?? Perhaps I'll get one for Xmas!
Went to Sesqi-centennial Park near Columbia, S.C. Bad rain/storm Friday night, and lost awning. Appears insurance will cover bulk of repairs! Knew I've been paying them cottin' pickin' people for some reason!
Whom has had experience with Good Sam Insurance, e.g., towing----tow vehicle and attached camper/TT??? Any problems? Current Ins. Co. wants extra to tow TT, but N/C for tow vehicle is why I ask. Appreciate any replies and/or info.
Everything is going up, except the wages, retirement, etc.
