My grandmother used to make this - I still remember the taste! I always assumed it was a German thing, but maybe it's a midwestern thing?

What type of lettuce are you guys using? Romaine? Iceberg? some other type?

This recipe is great. I make this every fall when I have buddies over for our German/Polish fest. It tastes just like my mom's. I don't care for raw onion, so I add it to the dressing and just cook for a minute so it is tender/crisp. With the heat off, add the torn lettuce (have it at room temp) and stir for a minute until it is wilted. This disappears quickly!

Wilted Lettuce

6 bacon slices
1 large head lettuce
1 medium onion, thinly sliced
1/4 cup vinegar
1 1/2 tsps. sugar
1/2 tsp. dry mustard
1/4 tsp. salt
dash pepper

Fry bacon until crisp. Remove and crumble bacon. Add remaining ingredients to drippings. Heat to boiling, stirring. Add onion, sautee slightly. Turn off heat, add torn lettuce and stir until wilted, add bacon back in.

I do this in a large pot so there is room to add the lettuce. Also- my mom makes bread and butter pickles. We add in a tablespoon or two or the juice to the above.

At home, we always used leaf lettuce grown in the garden. Now I buy Romaine and use it. I guess any kind of lettuce would work, but, I prefer some kind of leaf lettuce.

I always thought it was just a "eatin" thing. Hard to realize that there are people that have never heard of it.

I remember in the early spring, watching the garden for the lettuce to get big enough to make wilted lettuce. My Dad would have little patches of lettuce in different stages all over the garden. When one patch started getting big enough to eat, he would plant another patch. He did this right up until winter. We always hated to see the last patch gone.

I have never heard of this either. When I read wilted lettuce I thought this thread would be about how to keep it from doing so. I have however eaten many a warm spinich salad. I'll now have to try the lettuce.

Here is my recipe that was requested for Wilted Lettuce. My dad like it when the vinegar choked him so here is the basis recipe I go by, you can adjust the taste by adding less vinegar or more water.

Wilted Lettuce



3/4 cup(s) VINEGAR; Apple Cider.
1/3 cup(s) WATER
1/4 teaspoon(s) SALT
2 tablespoon(s) SUGAR
BLACK PEPPER; To Taste.
ONION; To Taste.
4 to 5 strip(s) BACON; Cut Up.
1 bunch LETTUCE; Leaf.

Cut up bacon into bite size pieces and add to a skillet along with the onion.
Brown bacon and onions until bacon is done and onions are tender.
Do not remove any of the bacon fat.
Carefully add remaining ingredients except the lettuce and bring to a boil.
When mixture comes to a boil add lettuce and toss to coat until the lettuce has wilted.

Debbie that looks very close, if not identical, to my Gramma's, but she only made it when she had leaf lettuce and green onions in the garden.
I haven't had it in decades, I guess I'll have to give it a try.

Jack Jack...thanks so much for this thread...my Mom (RIP) made this a lot, and it was one of my favorite things.
Can't believe I had forgotten about it.
She used Spinach when we didn't have lettuce from the garden, but in the summer it was a mix of garden Spinach and Leaf-Lettuce, haven't tried Ol' Blue's version, but it sounds dead-on.
