Do you have a Dutch oven? Our cooking habits changed for the better once we bought one of those. Basically, you use it like an outdoor crockpot. Dump in what you're cooking, set in on the charcoal, and walk away. Very limited effort, time, and little clean up. Makes a ton; our favorites are tamale pie, ham butt, and southwest chicken.
Also, you can find some great info on the Camp Cooks board, they were a big help when we went on a long trip for make ahead and freeze ideas.

Sloppy Joes are a big favorite around here when the whole family is together. Brown and crumble ground beef in a pot - depending on how much meat you use per bun, you'll get 4 to 6 sandwiches per pound. After the meat is cooked, I dump it into my largest strainer to drain off all fat. Put the meat back into the pot and add one 12 ounce bottle of Bennett's Original Chili Sauce for each pound of hamburger that you cooked. Heat through and serve on buns. That's it! This freezes well, too. If you're feeding kids, get those tiny little buns. Kids love them and it keeps the mess down. I've fed these to Marines and Soldiers and they all give this recipe a big "Good to go!" Have a great trip!

There is an old Girl Scout recipe that I love and you can adjust for any size group. Use a large pot and brown a pound (or two) of ground beef. Then add a couple of the very large cans of Campbells Condensed Vegetable Soup. Don't add water. Makes a hearty meal and you can add bisquets or what ever.

I used this a few times with kids, Take beef pork or combination, cook meat till crumbley just like meat sauce i then take as many jars Salsa(I use Mild)as needed in my case 6 jars 24oz, may vary depending amout of people your feeding. You can do this in as many batches as you need. After the meat is cooked add the Salsa heat .I wait till cooled down and i bag(freezer) and take with us frozen. When we go to have diner we add to big pot heat. Make a large pot of Pasta(your choice) i like sqiggle kind lol.Cook pasta till aldente( done lol)I even had Rice in stead of pasta. Make some garlic bread .wine /soda/ or a cold one and makes great dinner and different from the old pasta and meat sauce. I have also done this with cut pieces chicken. I feed 20 people with this and went for seconds
took 30 min to prepare and serve

Burgoo is good in a big dutch oven over a fire

when we used to have big groups camping together, my wife liked to make crumbled cooked ground beef with melted cheeses (3 or 4 flavors I think) over it in a lasagna pan and they could either eat it on bread, bun or in a bowl. we still do that for just the two of us. variety on the usual burger on a bun thing

one of our favorite group things where everyone knew what they were to cook, was breakfast for supper/dinner. Made buffet out of it. fortunately we never got stuck with the pancakes or french toast , those are probably the most labor intensive. the whole campground comes walking by when they smell bacon sausage etc at 4 or 5pm lol

How about making a large pot of chili and after it cools ladle it into 1 gallon freezer bags and either freeze or refrigerate. At the campgrounds just dump into a big pot, heat and serve. Chili is good at any time. Have some bowls of condiments around like chopped jalapeno's shredded cheese and a bottle or 2 of hot sauce.
