At a potluck a lady from Pa. made a really good dish in her crock pot,she told me the ingredients but not the amounts.So I was wondering if someone has a casserole using ground beef(hers)or Italian sausage(what I have on hand),zucchini,jar tomatoes with sweet peppers,mozzarella and brick & colby cheese? I guess I could "wing it" but like amounts and time to cook. Thanks!

I found this on cooks.com
It is similar to what you descibe. You may have to modify it a little.

ZUCCHINI CASSEROLE

3 sm. zucchini, sliced
1 med. onion, sliced
Fresh mushrooms, sliced
1 to 2 lbs. bulk Italian sausage
Your favorite cheese topping, shredded
1 to 2 cans stewed tomatoes, drain a small amount off
Seasoned salt and pepper
Paprika

Fry sausage in skillet until lightly browned. Drain in same skillet saute zucchini, onions, mushrooms until crisp and tender. Add tomatoes and sausage and simmer to cook off some juice.
Place mixture in casserole dish. Cover with shredded cheese and bake until cheese is browned slightly in 350 to 375 degree oven. Season vegetables to your taste while sauting.

Thanks,sounds very similiar with the exception of the mushrooms which we love on most everything anyway.She used jarred tomatoes with sweet pepppers,don't think I've seen these in the store down here.I was thinking I could use spaghetti sauce with peppers for the same taste.I'm going to try this for supper tonight. I had been looking on AllRecipes.com and Recipe Zaar and found some good recipes,but yours is the most like what I was looking for.

That sounds really good. It looks like we'll have a bumber crop of zucchini this year, I'll be sure to give this a try too. Thanks for posting!

I made this tonight,I kind of combined this and another recipe and it was very good. I used a jar of Classico Italian and green pepper spaghetti sauce,put a thin layer in a round casserole dish and layered half the zucchini,thin sliced onion,drained browned sausage and shredded sharp cheddar,finished up with rest of sauce and ingredients,having cheese as the last layer. I thought it was too dry and rinsed the jar out with a little water-MISTAKE! I cooked it in a 350 oven until the zucchini was tender. It was a bit "juicy" so maybe should have cooked the zucchini awhile first and poured off liquid and definitely shouldn't have used any water. We ate 2 helping each though and I'm sure the left overs will be better!

yup, teh squash has such a high waer content. Needs to be sauted firt, with no add water.
