We are staying at a RV Marina for a few months while my hubby works on his mothers New home. There are little Fresh Fish markets everywhere on the docks. From Salmon to Halibut..it's fresh from the Ocean.
I love grilling, but does anyone have any other fish recipes I could use? Thanks
Camping with kids makes life interesting.

As a matter of fact, I do. Made this tonight. I found the recipe somewhere on the web. It was delicious and salmon is not normally a favorite of mine.
Grilled Salmon Fillet
1 lb. salmon fillet
8 oz. mayo
1 tbs. lemon juice
Pinch of salt
Pinch of pepper
2 tbs. chopped dill – I used less and it wasn’t fresh dill
Blend all the ingredients. Brush fillet with mixture and grill approximately 7 minutes. Turn to skin side and cook approximately 10 minutes.
Pat
May the road rise with you, the wind be always at your back.

Here are three of our favorite fish recipes. I have made all three with halibut, orange roughy, tilapia and /or cod (frozen). So with your fresh fish...Wow!
#1 Herbed Fish
1 lb. fish fillets (about 1/2 thick, if thicker adjust cooking time)
2 Tbsp. olive or veg. oil
1/2 cup Bisquick
1/4 cup Progresso Garlic Herb bread crumbs
1 Tbsp. chopped fresh or 1 tsp dried basil
1/4 tsp. salt
1 egg
Heat oil over med. heat. In small bowl mix Bisquick, bread crumbs, basil and salt. In another dish beat egg. Dip fish into egg, then coat w/ Bisquick mix.
Reduce heat to med/low. Cook fish in oil for 8-10 minutes, turning once, until fish flakes and is brown on both sides.
Serves 4
#2 Lemon Pepper Baked Fish
2 Tbsp. butter or margerine
2/3 cup Bisquick
1/4 cup yellow cornmeal
1/2 tsp. lemon pepper seasoning salt
1/2 tsp salt
1 egg
2 Tbsp water
1 pd. fish
Heat oven to 425. Melt butter in rectangular pan, 13x9, in oven. Stir Bisquick, cornmeal, lemon pepper and salt. Mix egg and water. Dip fish into egg mixture, then coat with Bisquick mixture. Place in pan. Bake uncovered 10 minutes. Turn fish with spatula, bake 15 minutes longer or until fish flakes easily with a fork.
#3 Lemony Fish over Vegetables and Rice
1 pkg(6.2 ounce) fried rice mix
2 Tbsp butter or margerine
2 cups water
1/2 tsp grated lemon peel
1 bag(1 pound) frozen corn, broccoli, and red peppers
1 pound fish fillets
1/2 tsp lemon pepper seasoning salt
1 Tbsp lemon juice
2 Tbsp chopped fresh parsley
In skillet. cook rice and margerine over medium heat 2-3 minutes, stirring occasionally until rice is golden brown. Stir in water, seasoning packet from rice mix amd lemon peel. Heat to boiling, reduce heat. Cover and simmer 10 minutes.
Stir in veggies. Heat to boiling, stir occasionally. Cut fish into 4 pieces, arrange on rice mixture. Sprinkle fish with lemon-pepper salt, drizzle with lemon juice. Reduce heat. Cover and simmer 8-10 minutes or until fish flakes easily. Sprinkle with parsley.
Enjoy your fresh fish!!!!

Recipes...who cooks fish using recipes...
Salmon works great with any kind of sweet topping or marinade.
Put some foil sprayed with Pam on the grill and grill the salmon meat side down till cooked half way through, turn over to place the skin side down, and top the fish with anything sweet you happen to have on hand in the galley. Grill till fork tender.
Such as brown sugar, butter and pecans.
Or apple sauce. Or orange marmalade.
Or a sweet asian Hoisin based BBQ sauce.
Just use your "sweet" imagination.

Maybe it's a guy thing but when I go into the kitchen to prepare dinner (I'm retired, the DW still working), I become one with the stove. If you have ever read "Zen And The Art Of Motorcycle Maintenance" you will know what I mean. LOL!
Many times I've prepared something absolutely wonderful but cannot remember what all went into it, and so it becomes another one-of-a-kind recipe, never to be made again. Sigh!

We're on the East coast, catching black seabass. Our favorite way to make them is:
Dip the fillets in egg, then Saltine cracker crumbs (we put Saltines in a Ziplock bag and run the rolling pin over it crushing them fine). Then brown them in Crisco oil in the fry pan. Salt and pepper to taste. (Not the same taste if using store bought crumbs.) We had them tonight for supper - delicious!
