We just picked up our Cardinal. It has 4 bunks in the rear. One is a couch in a slide out, another bunk above the couch, and two more which are metal spring bunks that fold up on the rear wall so they are out of the way when not in use. Not sure what you are using as a tow vehicle or price range you had in mind. Those factors can make a big difference in looking for a unit. The Cardinal is a heavier unit (11k dry) and 36.5 ft long. Good luck in your search.

We have a Sunnybrook Brookside 298FWBHS, and we love it. Lots of room, and very well made. The 299 FWBHS also has 4 bunks.

This one, Keystone Montana Mountaineer 332PHT, meets your specifications:

I have the 342PHT, it's predesessor, which has the identical floorplan. Two of the bunks fold up flat against the rear wall. The bunk above the jack-knife sofa also folds up. All bunks are rated at 250 pounds and can sleep an adult (if you can tolerate bunks). The bunk room has a hard door for privacy.
The front bedroom also has a hard sliding door for privacy. The bathroom is self-contained and very roomy, with a large, garden-style tub-shower.

We where also looking for a bunkhouse since our boys are bigger and they tend to bring friends. We also checked the Wildcat out and felt for our needs, to small and would outgrow in a year. Loved the Sienna quad bunk which is similar to the other forest river brands of Cedar Creek and Silverback, but concerned about the actual overall length of it. We also checked out the Jayco units lite weighted one and had issues with both of those. The bunk house was only for sleeping and not for just hanging out or playing cars etc since there was no room and the other one with the queen bed in front and bunkhouse (futon style bed underneath bunk) was actually nice, but when trying out the queen size bed, there is a shelf as a headboard and your hands/arms keep hitting it. Even an avg size man would hit this shelf.
We did find the Sunny Brook Bristol Bay unit with a bunkhouse in the back that we fell in love with. It has a queen size bunk on the right side as an upperbunk over the entertainment system/closet for 2 small size kids to sleep in if needed with a ladder and also netting to keep them in there. The other side slides open with an upper bunk and a couch that opens up into a regular size bed to sleep 2 with an airmatress. Used it once so far and it is comfortable. This room might also work since you have a baby and can actually for now set up a playpen instead. The kids played in the room on the hot days and also played play station with each other and no real issues.
Just one thing- Take your time looking and get something that will suit all your needs. We took several months and alot of on line shopping to all the RV wholesalers out there so we knew what the prices are.

I'll put my 2 cents in and recommend you look at this Sabre 31BHDS by Palomino. One nice thing is it can be towed with a 3/4 Ton truck.
We love our Sabre.

We have the Laredo 32rs with the front bunks and a nice high ceiling for us. Thants why we like this unit. Let the kids have the low ceiling in the front because it is a mid profile.
