Looks like you have several good suggestions here. The forums are great for learning.
Can you post for all here the dealer that didn't educate/explain this to you?
I know on our MH, which is our first RV, the dealer explained EVERY thing. Well, I think we spent about 10-12 hours total in it before we even made the offer. So we had tons of questions.
Also post what you do to correct your situation, so others who follow will learn. Thanks for the post.

Just goes to show the a similar priced Fleetwood is just better engineered. In fact, my 1998 Fleetwood Pace Arrow had the same EMS system that allowed both AC's on 30 amp service - 10 years ago.
To many manufacturers are cutting too many corners these days.

They have to dumb down something to make it easier for the salesman to upsale from a lower end unit. There was no real cost savings when building the unit.

Others have 'told you how it is', I will tell you , you have an easy fix. Like another poster said, split off the second A/C, but feed it with a three way switch (common at Lowes,Home Depot, any hardware store). Feed one side of the three way from genny, and the other with a #14 or #12 SO cord (also at named locations). When you hook up at the CG, just connect the extra cable and put the three way swith to feed from the CG, when on the road, throw the switch the other way to feed from the genny. No danger and its safe that way.

Our coach is only 30 amps and we don't have any issues with powering both A/Cs and numerous other items simultaneously (except for my DW's hair dryer). The EMS does a great job and is not noticable at all when things shut off and turn on.

My coach draws 20 amps with both roof AC's on, 13.5K BTU front, 11K BTU rear. My EMS will back off the electric water heater, rear AC compressor, rear fan and Fridge if necessary to keep under 30 Amp draw.

Frank I read all of the info but still not sure why this is needed?
It seems just running a 12/3 120 volt cord from the CG hook up to a male connect to the 2nd A/C unit would be more simple.

I didn't know that since I can run two on my 30 amp winnie with EMS. but if youze buys cheap, you gets cheap. JMHO
