I am quite sure towing an all wheel drive X5 all four down is not workable, but what about towing one on a dolly? We have a Mercedes C230 and a Z71 4x4. Is the only towable of these the Z71?

Nope. If two wheels are turning and two aren't, you'll kill the transfer case very, very quickly...like in a few feet.
