I try to keep my knives sharp, but with all the use they get, and as many as I have, I do fall behind. If there was someone in the CG with a sharpening service, I would use them. Maintaining an edge and sharpening a dull blade are two different things. Go 4 it!!
My hubby sharpened ours with a steal all the time. Does anyone else remember having a person with a cart that came through their neighborhoods with a bell ringing to let you know he was there to sharpen their knives. People came out of there houses when they knew he was their with all their knives. I remember how thrilled my mom was to have her knives sharpen so precisely. Good memories!

Ceramic -- Stone -or- Strop ?? So used to keeping my leather working stuff (as well as kitchen) sharp don't usually have anyone else work them for me. Well had a cousin help once 'ground' a few of my best carving knives on elec sharpener -- took a year to gentle 'm back into decent shape.
Nothing beats a well sharpened knife. I have tested knives that have been sharpened by guys that "know"(read DIY) how to sharpen and they were pretty bad.
If you have been at it for a long time, have the right equipment, and I don't mean the usual assortment of home gadgets, then I would pay for a good job.

"Quality" is the thing. Most sharpeners, when you can find them, aren't very good. I would certainly try a guy once- just not with anything too valuble. For knives, repeat business is maybe a once a year thing though...
Just running them across a Foley Belsaw Sharpall won't "cut" (ouch ) it. There's a definate skill involved.
Sharpening other cutting tools is a plus. Some carpenters still use hand tools. I have to drive over an hour each way for a reasonable sawsharp so right now I do my own. If I'm working in his neighborhood for a while, I do drop a few off.
