I had to make some potato salad this weekend for dinner on Saturday. We are camping with my wifes aunt and we had brisket tonight. I have never made potato salad before so I asked many folks this week what they liked in potato salad here is what I cam up with and it was a hit!
I used red potatoes with the skins on (some folks like this, some don't) How many taters? About four pounds. I had never made it before, I had plenty left!
I put bacon in it and some bacon grease
I boiled the potatoes for a little bit about 15 minutes then took them off the heat and put them in the freezer to cool them down. I put real mayo in it, the bacon grease and bacon and chopped up some green onions and put them in it as well. What I added also was a package of ranch dressing seasoning. It really made it taste good.
You all probably been making tater salad longer than I have been around, but I was pretty proud of myself... The bad part is that I am going to be eating potato salad all week for lunch!
I think the bacon and the ranch dressing mix really add to the salad.
What I have also found is that everyone likes it a little different. Oh, I almost forgot, I also put some mustard for some tangyness...
I'm off for my late night snack, you guessed it, tater salad!

Here's my recipe:
Peeled taters, big pot full, boiled, drained and MASHED (yeah, mashed but no butter)
Mayonnaise (not salad dressing)
Mustard
DILL relish
White Onion chopped fine
Hard boiled eggs - 4
Salt, Pepper
and for the zip - VINEGAR - not much, just a tad to give it a kick.
I use my hand held mixer and let'r rip. I like mine warm and yellow. No cubes please! Bacon sounds great in this too - gotta try that one next time.

Isn't it interesting how everyone has a slightly different recipe for potato salad? The basic ingredients are the same but the results are so different! I don't think I have ever had a commercially made potato salad that was worth putting in my mouth.

Never thought of ranch dressing- or chopped green onions either. Those are two to remember. Everybody does make it a bit different- most are pretty darned good.
I do use bacon sometimes- it adds a lot to the salad.
I usually use pickles too- either sweet relish or chopped up dill pickles and the hardboiled eggs. Two other ideas are a little sour cream (goes nicely with the mayo, bacon fat and eggs ) and some sliced black olives.

for those who want to cut out the mayo, here is one that tastes pretty darn good:
taters, bite size, red or white, with skin or not. boiled 'til tender.
drain, toss with zesty Italian dressing, and serve warm.
or let it get cold first.
you can add some slivered sweet yellow onion and green/red/yellow peppers, and black olives to this for a more colorful salad.

potatoes cut into cubes , add chopped up onions along with green peas and boil,take them off the stove before potatoes get to soft and drain ,add a mayonnaise that you like and add in some yellow mustard, mix and cool.i usually hard boil eggs in the same pot at the same time i boil the patatoes then remove them before draining after the salad is done I cool the eggs under cold water and shell them cut the eggs in half take out the yoke and mix the yokes with mayonnaise and yellow mustard and put it back in the cut egg centers and then place them on the salad sprinkle some parsley over the salad and eggs and sprinkle with a little paprika.

That is the same trick I use for my macarroni salad. I never put pickles in the tater salad, but might just try it next time. I like to have different tastes and textures between my tater salad and Macarroni salad. I am not a fan when the only difference is pasta in place of taters. That is just lazy in my opinion.
