Sometimes for a quick and simple version of stroganoff, I heat a couple of cans of Roast Beef and Gravy--the chunky beef kind, not sliced. I usually use Hereford brand or Libby's. I season it to taste with black pepper. I often add a can of mushrooms that have been drained. You can add whatever seasonings you like such as paprika, etc. Then I stir in some sour cream until I get the consistency I like. We eat it over what ever we have such as noodles, rice, or mashed potatoes.
I know this isn't as good as a "from scratch" recipe, but it is a quick and simple meal when you need something fast. It is easy to do in the camper, too.

Yup, thats how we do it with a bit of smoked paprika added last.
