3 gal. in the black tank with Happy Camper treatment; other 2 tanks empty. I don't want to carry the weight, even though I could; gas prices are too high.

There have been a couple of threads recently about gas mileage variation from weight vs. wind resistance. Look them up and you'll see that weight matters very little in the mpg equation.
We generally travel with whatever circumstances dictate finding water as we can or need to. Full or empty pretty much tows the same -if- your tank is centrally located. I would rather tow with every tank full any day rather than into a headwind.
A tank front or rear can change your TW more and some rigs that would be a concern.

On longer trips we shoot for 1/3 to 1/2 full. This worked out very well on a recent trip for the 2 of us.

We always travel with a full fresh water tank. We boondock so there is no water available before setting up camp.
We have camped only twice in a real campground with full hookups. I liked it! But nothing beats setting down in the National Forest with all that beauty and peace around you.

FW empty. and a couple gallons in gray and black.. Fill up at the CG.
We carry enough bottled drinking water for the trip. I can keep 5 one gallon jugs under the fridge.
I have a couple jugs from the well in the tub for the potty breaks..
It's worked so far. I usually have plenty beer if an emergency arrives.

We always travel with fresh water tanks full. Better to have it and not need it than not have it available.

Empty. We always camp with hookups, and as far as potty breaks in transit, that's why we stop for gas. The kids know that when the truck stops, they better go!
I actually would consider carrying fresh water on the trip to the campground for potty breaks in the camper, but absolutely not on the way home. Once my tanks are clean upon departing the campground, they ain't gonna get used. (except for a true emergency, of course)

Usually about 10 gallons just in case we have the "emergency" bathroom need or in case I need to wash up if I should have to change a flat tire.
We have also found a few campgrounds where the water wasn't the best tasting. In these cases we have the extra water on board for coffee, etc.

If we are staying close home we travel with an empty FW tank and hook up at the CG. If we are going a long distance we carry 8-10 to flush with or for an emergency washup. We only drink bottled water so we carry that in the TT or in a cooler in the TV. Grey tank...empty, black tank about 3 gallons.
