Zucchini Alfredo
This was super easy and delicious!! I took it to a pot luck and it made a very large pan. You can not tell the zucchini is included. It would be awesome with chicken. The next time I make it I will probably include carrots and shrimp.
Finally, I added course ground black pepper before serving.
INGREDIENTS
1 (12 ounce) package uncooked egg noodles
3 tablespoons vegetable oil
2 cloves garlic, minced
4 cups shredded zucchini
1/2 cup milk
4 ounces cream cheese, cubed
1/2 cup chopped fresh basil ( I used fresh Parsley and oregeno)
salt and pepper to taste
grated Parmesan cheese
DIRECTIONS
Bring a large pot of lightly salted water to a boil. Add egg noodles and cook for 8 to 10 minutes or until al dente; drain.
Heat the oil in a skillet over medium heat. Stir in garlic, and cook 2 minutes. Mix in zucchini, and cook 10 minutes, until some of the moisture has evaporated.
Pour the milk into the skillet, and stir in cream cheese until melted. Mix in basil. Season with salt and pepper, and sprinkle with Parmesan cheese.
Serve over the cooked pasta.

For people that are trying to cut down on carbs, cut the zucchini in long, thin threads and cook for several minutes in the skillet. Those make the "noodles".

That looks very good. Anything with "alfredo" in the name starts my mouth watering before I open the post.
Merrykalia, that's a great idea. It would work with about any sauce.
In my area zuccini hasn't dropped a great deal in price like last year so folks only seem to buy the smaller really tender ones at farmer's/flea markets. But the larger ones (say, well over 12") are at last years prices or even free. Some vendors throw in a large zuke when when you buy a "container" of the smaller ones.
For Star and Merrykalia: I'm assuming you peel and... de-seed the zuccini first?

Wish you were here you could have all the free zuchinni you could carry.
I only peel the older ones, the younger I leave the skin on figuring it is like other veggies and the skin adds loads of fiber and vitamins.

I am having company this weekend and this is dinner for the first evening they are here! Sounds great! And I have lots of my own zucchini and basil in my garden. I think I will add shrimp also.

We just tried it for the first time and it is awesome. We were also thinking that shrimp would be good in it. It made enough for us 4.
