We made these tonight, out on the Coleman stove to keep the smell/mess outdoors. They're really, really good - ought to be illegal! It's a great way to use up some of our garden produce.
The basic batter is great and I'm going to hang onto this one and try it with chopped apples in the batter sometimes (instead of the corn and zucchini)
2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon cumin
1/2 cup sugar
1/2 teaspoon salt
fresh ground black pepper
2 eggs, beaten
1 cup milk
1/4 cup butter, melted
2 cups grated zucchini
1 1/2 cups fresh corn, kernels cut from cob
1 cup finely shredded Cheddar cheese
oil for frying
DIRECTIONS
In a large bowl, stir together flour, baking powder, cumin, sugar, salt, and pepper.
In a small bowl, whisk together eggs, milk, and butter. Whisk wet ingredients into dry ingredients. Stir in zucchini, corn, and cheese; mix well.
Warm oil in a cast iron skillet over medium-high heat. Drop batter by the tablespoonful into hot oil. Fry until crisp and brown, turning once with tongs. Remove to paper towels.
This recipe makes a lot of fritters. You may want to halve it if there's just a couple of people.

I had alot of this batter left over, so I pulled it out of the fridge this morning and added some finely chopped vidalia onion. Then I cooked it on the griddle like pancakes. It's good that way too. You get more of the crunchy crispy stuff on the outside with the sweetish soft batter on the inside.
I can see alot of possibilities for this batter.

I made these for supper tonight and man oh man are they good! I made a full batch so I can have some for breakfast tomorrow. Thanks so much for posting!
I also like your idea of using chopped apples in the batter. Use cinnamon instead of cumin, and 3-3.5 cups of apples. Sure sound good to me!

I almost tried it with the apples this afternoon, when I was slicing one to go with my lunch. But... I got too lazy to chop a bunch of them. I may try it next weekend when my kids and grandkids are here. They'll eat anything!

I just wish mine would eat anything! My kids weren't picky eaters but the grandkids and greats sure are.

Yum thanks for sharing. I was looking for something to go with grilled pork chops for Labor Day camping trip and those fritters sound just perfect!

We've made fritters with pancake mix, an add water brand, mixed a little thick. We generally mix it by feel, add salt, pepper, garlic powder and onion powder. We generally always add some green onion and corn plus squash, zucchini, eggplant, etc that's available. We often do them when we have a variety of veggies, but not enough of any one to make a dish.

HOLY COW These were awesome! We mixed up the batter Friday afternoon and transported it in a big ole gallon sized zip lock bag. We camp in a pup (pop-up) so refrigerated space as well as storage is a tad bit limited lol. Cooked the fritters on Friday night and used the left over batter Sat. morning. They were absolutely fantastic and as simple as pie! I did add some chopped Vidalia onions to the batter and simply sprayed the griddle on our grill with cooking spray and cooked them as we do our pancakes. DH and our friends that were camping with us loved them as well. I sent her the recipe as soon as we got home Thanks again for sharing, this will be a regular during Zuchinni season both here at the house and while camping in our pup!

Glad you liked it! I still haven't gotten around to trying it with the apples. It's supposed to cool down this week so maybe I'll finally give it a try. I was also going to try plopping a bit of this into a greased pie iron and trying it over the fire to see what happens.
