It will soon be my turn to bring "breakfast" for Sunday School, and I am sooo bored with everything I have made, and it is sooo time for something new.
I'd like recipes for the tortilla pinwheel-thingies. I know you all won't let me down. You are a great bunch of cooks, and I thoroughly enjoy all the recipes I have gotten from this forum.

I don't really know as far as a technical recipe for them, but I will tell you what I like in mine.
Cream cheese, cajun seasoning mixed in with the cream cheese, green onions, ham and turkey. Roll them up, use plastic wrap, cool them off for a few hours and cut em up!
I'm not sure what you could put for that breakfast feel... Maybe some bacon? I think one might be good with some fruit pie filling mixed with the cream cheese. Good luck, I'm sure you will get better responses than mine and we will both be impressed!

Use the smaller 6" floor tortilla and spray with butter oil spray and drizzle with white or brown sugar and cinnamon cut into wedges and then bake till crisp. Great finger foodor use a dipper into plain or fruit yogurt..

Thanks Texlawdawg and BobJoh for the ideas. I appreciate them. Anyone else?? And, it doesn't necessarily have to be "breakfast-y." One lady brought chips and dips -- our group isn't picky -- we eat anything and everything!!
Texlawdawg, where do you get your cajun seasoning? Is it something I will be able to find in West Texas, or is it easier for you to find, living in Longview? SIDEBAR: I have a friend from Longview who retired a couple of years or so ago from being a Ministry Assistant at a Baptist church there.

These are really easy. Soften 8 ounces of cream cheese and mix in a small spoonful of miracle whip, adding powdered garlic if desired. Chop up any of the following and add to the cream cheese mixture, green olives, black olives, or canned jalapenos. Spread onto large tortillas and roll-up. Wrap in plastic and refrigerate over night. Slice and serve.
The green olives don't taste very good with the garlic powder. I used to follow the 8 ounce rule now I just buy the big packages of cream cheese and add a few dollops of miracle whip. I do this because I always make lots of them and more than one kind at a time.

I've got a recipe for Mexican tortilla roll-ups that are always a hit. It's been awhile since I made them so I don't remember the measurements of all the ingredients. I'll check my recipe tonight and post it later.
In the meantime, I've also made these roll-ups, but they don't involve tortillas.
Pastrami Roll-ups
1/2 lb. of thinly sliced pastrami
1/3 C. soft cream cheese with chives and onions
1/2 C. roasted red bell peppers, cut into 3/4 inch wide strips. If you purchase them in a jar, drain the juice.
Spread each pastrami slice with cream cheese. Top each with a roasted pepper piece at one end of the pastrami. Starting at the edge with the pepper, roll up tightly. Refrigerate at least 2 hours or until they are firm. I like to do them overnight.
Slice each roll into 1" thick pieces. Secure each roll-up with a party toothpick.

Here is another one I make.
2 10oz pkgs frozen chopped spinach thawed, drained and squeezed in paper towels.
1 8 oz cream cheese softened
1/2 cup mayonnaise
1/2 cup sour cream
1 env. Ranch Dip Mix
1 jar bacon bits ( I don't like the jarred ones so I make my own)
1 pkg 8-10" tortillas
In mixing bowl combine cream cheese, sour cream and mayonnaise. Beat in dip mix. Add bacon bits and spinach and mix thoroughly. Spread mixture onto tortillas and roll each one up tightly. Wrap in plastic wrap. Chill for several hours or overnight. Slice and serve.
The original recipe calls for 4 green onions chopped and added in with the bacon and spinach. But I'm not a big fan of onions so I've never used them.
